THE How to Make Home Brewed Ale. 0 Burton, in the Rural New Yorker, gives bis method of making home brewed uio as follows: The art of biewing is very easy to be understood, for it is exactly eimiiar to the process of tea making. Put a handful of malt in a teapot; then fill it with water —the first time rather un der boiling heat. Af er it has stood some time, pour off the liquor just as you would tea, and fill up the pot again with boiling water. In a similar manner pour that oft, and so go on filling up and pouring off un til the malt is tasteless, which will be the case when all its virtue is extracted —the liquor of malt tea must then be boiled with a few hops in it, and when it becomes cooi enough—that is, about blood heat — add a little yeast to ferment it, and the thing is done. This is the whole art and process of brewing; and to btew a large quantity requires just such a mode of pro ceeding as it would take to make a tea breakfast lor a regiment of* soldiers. A peck of malt and four ounces of hops will produce ten quarts of tile, and of a better quality than can be purchased. From Godey's Lady's Book for February. Snoicden Pudding —One half pound beef suet shred very fine and small, oric balf of a pound of brown sugar, one half of a pound of broad crumbs, two tab e-poo * fuls of orange marmalade, three eggs, rats ins round the mould. To be boiled three hours; wine sauce. Corn Griddle Cafes. —Almost every one is interested in knowing how to make corn cakes most palatable, since so much more of it will be used in these straitened times. The following is said to f>e an ex cellent receipt: Scald at night half the quantity of meal you are going to use. mix the other with cold water, having it the consistency of thick butter; add a lit tle salt and set it to rise; it will need no yeast. In the morning the cakes will be light auu crisp. Rock Cream —This will be found a very ornamental as well as a delicious dish for a supper table. Boil a teacupful of the best rice till quite soft in new milk, sweet en it with powdered loaf sugar, and pile it up on a dish. Lay or: it in different pla ces square lumps of cither currant jelly or preserved fruit of any kind ; beat up the whites of five eggs to a stiff f oth, with a little powdered sugar, and flavor with either orange flower water or vanilla. Add to this, when beaten very stiff, alout a t3blespoonf'ul of rich creaui, and drop it over the rice, giving it the form of a rock of snow. Premium Corn Bread. —Scald a pint of Indian meal, add to it a pint of sponge, half a teacup of molasses, small teaspoon ealeratus, stir in flour with a spoon until quite stiff, put in pan, let it rise, and bake it one hour. To Dress Celery. —Beat up well one yolk of egg; add two tablespoonfuls of cream, one of white sugar, three of vine gar, a teaspocnful of olive oil. one of made mustard, and a pinch of salt. Cut the celery into bits, and add the rest. Sponge Coke. —Nine eggs, their weight in sugar, the weight of five iu flour, and the juice aod peei of a lemon. Lady Coke —A pound of sugar, cne of flour, a half pound of butter, the whites ol sixteen eggs. Hub the butter and su gar to a cream, add a little of each ot the eggs and flour alternately. Green Apple Pies —Grate raw six good apples, add a cup of sugar, three table Spoonfuls of melted butter, lour eggs, a a little lemon juice, two tablespoonluls of brandy, a few dried currants, a little spice Line plates with a paste, fill and bake without an upper crust. SAVED. There is a word of joy shut up in that little word, saved ! llow many a dawn of rich and golden beauty for the soul lias it ushered in, after a gloomy night of deferred hope and anxious watching ! It is always a sweet word to hear—a sweete word to speak. So full of happy music when the lips utter it—so full ot happier meaning when the heart feels it. The voice never breathes it, but the face be comes radiant with joy, and the eye spar kles with delight. Every chord of the heart vibrates with inexpressible pleasure, as its music falls upon the ear long waiting in anxious expectation. It has a history of its own, written in the mingled experience of sorrow and joy of' many a soul. Few there are who have not uttered it in more or less meaning, through whose soul has it not sent a thrill ot delight, filling it too full for utterance. Sound it out in the still of night, and some achi.ig heart will take it up, and send it joyfully back again through the gloom and darkness. Whisper it ever so softly, and there will be some soul that cannot contain itself for very joy It is the ave nue through which the soul breathe" out its overflowing gratitude. Its whole ex pression is that of thankfulness. Saved ! and for what? Ah! from a life of intemperance, of misery, of crime, of degredation, of 6hame, of in famy, and from death. I f you have known, kind reader, what it is to have had the dear object of your heart's best affections snatched from any of these calamities, you have found no word that would BO fitly express the outgushing thankfulness of jour heart, a* the little word— Saved !
