THE recipes. [From Peterson's Magazine for September.] Pickles —Should be made at home, as both cheaper and better than if bought at pickling establishments, where they are invariably made up with pyroligneous acid —a species of vinegar which, though very strong, has a disagreeable flavor. The pickles should be kept either in bottles, or in stone or uny lazed jars, as the vinegar, or even soured vegetables, will corrode the glazing of the jars, which, being made from lead, is poisonous. Rules to he observed with Pickles. — Avoid as much as possible the use of metal vessels iu preparing them. Acids dissolve the lead that is in the tinning of saucepans, and corrode copper and brass; consequent ly, if kept in such for any length of time, they become highly poisonous. When it is necessary to boil vinegar, do it in a stone jar on a stove. Use also wooden spoons and forks. Sec that the pickles are always complete ly covered with vinegar; and if any symp toms appear of their becoming mouldy, boil the vinegar again, adding a little more spice. It is a good rule to have two-thirds of the jar filled with pickles and one-third with vinegar; keep them also close stop ped, as exposure to the air makes the pick les soft. In greening pickles, keep them closely covered, so that none of the steam of the vinegar in which they are boiled be allow ed to evaporate; and boil them only for a few minutes, or it will take away their strength. A very small quantity of alum will make them firm and crisp, but too much will spoil them. Young Cucumbers. —Choose nice young gherkins, lay them upon dishes, sprinkle salt over them, let them lie a week, drain them off, and put them into stone jars; pour boiling white vinegar ove." them, place them near the fire, cover them well with vine leaves, and if not a good green, pour off the vinegar and boil it again ; cover them with fresh vine leaves, aud continue doing so until they are a good color. Use wooden spoons with holes to dish all pickles keeping them always well covered, and free from air getting to them. Rice Pancake. —Boil a half pound of rice to a jelly, in a small quantity of water : when cold, mix it with a pint of cream, eight eggs, a bit of salt, and nutmeg; stir in eight ounces of butter just warmed, and add as much flour as will make the batter thick enough. Fry in as little lard or dripping as possible. Or —Mix the yolks of two wellbeateri eggs with a pint of cream, two ounces of sifted sugar, a little nutmeg, cinnamon, and mace, or a few drops of oil of almonds. Hub the pan with a bit of butter, ar.d fry the pancakes thin. Potato Cheesecakes. —Four ounces of L ut ter, the same of pounded sugar, six ounces of potatoes boiled and floured through a sieve, the rind of one lemon, and half the juice, unless acid is desirable; mix these ingredients well together, with two eggs, and fill the tart-pan and bake it. Custard Pudding. —Flavor a pint of milk with the peel of one lemon, an inch of cinnamon, and a bay-leaf; when boiled sufficiently strain it, and sweeten to palate : break four eggs, beat them up, pour the milk to them; put it into a mould and boil for half an hour. Serve with wine-sauce. Or —Mix one tablespoonful of flour into a pint of milk; add four eggs well beaten, a tablespoonful of pounded loafsugar, and a little orange flower water; put it into a buttered basin, laying a paper over it be fore putting on the cloth ; let it stand four minutes before turning it out. It should boil half au hour. Lemon Cheesecakes. —Mix four ounces of sifted lump-sugar and four ounces of but ter, and gently melt it; vlien add the yolks of two and the white of one egg, the rind of three letnous chopped fine, and the juice of one and a half, one Savoy biscuit, some j blanched almonds pounded, three spoon- j fuls of brandy. Or —Boil two large lem ons, or three small ones, and after squeez ing pound them well together in a mortar, taking out the inner skin; add four ounces of loafsugar, the yolks of six eggs, and eight ounces of fresh butter. LIVER COMPLAINT, JAUNDICE, and all Bilious Affections arise from some derangement either torpidity, congestion, or obstructions of the l.i-.er. Torpidity and congestion vitiate the bile and remit r it unfit for digestion. This is disastrous to the health, and the constitution is frequently under mined by no other cause. Indigestion is the symp tom. Obstruction of the duet which empties the bfie into the stomach causes the bile to oteriluw into the blood. This produces Jaundice, with a j long and dangerous train of evils. C'ostiveness, or ! alternately costiveness and diarrhoea, prevails. Feverish symptoms, languor, low spirits, weariness, restlessness, and melancholy, with sometimes in ability to sleep, and sometimes great drowsiness; sometimes there is severe pain in the side ; the skin and the white of the eyes become a greenish yellow ; ] the stomach acid ; the bowels sore to the touch ; [ the whole system irritable, with a tendency to fever, j which may turn to bilious fever, bilious colic, bilious diarrhoea, dysentery, &c. A medium dose of three or four I'ills taken at night, followed by two or three in the morning, and repeated a few days, will remove the cause of all these troubles. It is wicked to suffer such pains when you can cure them for 2o cents. RHEUMATISM, GOUT, and all Inflammatory Fe vers are rapidly cured by the purifying effects of these Pills upon the blood and the stimulus which they afford to the vital principle of Life. For these ana all kindred complaints they should be taken in mild doses, to move the bowels gently, but freely. As a DINNER PILL, this is both agreeable and useful. PATENT COAL OIL GREASE. r Grease is made from COAL OIL, 1 and has been found by repeated tests to be the most economical, and at the same time the best lubricator for Mill Gearing, Stages, Wagons, Carts, Carriages, Vehicles of all kinds, and all heavy bearings, keeping the axles always cool, and not requir ing them to be looked after for weeks. It has been tested on railroad cars, and with one. soaking of the waste it has run, with the cars, 20,000 miles 1 All railroad, omnibus, livery! stable and Express companies that have tried it pronounce it the e plus ultra. It combines the body and fluidity of tallow, beeswax and tar, and unlike general lubrica-' tors, will not run off, it being warranted te stand any temperature. I have it in boxes 21 to 10 lbs. Also keg* and barrels from 30 to 400 lbs, for general use and sale.
