lasses at.d bake.

boil it, season it on the pot, take up the
meat, put in a flour thickening, and scald
the gravy; in ike the crust of sour milk
made sweet with saleratus; put in a piece
of butter or lard the size of an egg; cream
is preferable to sour milk, if you have it.
Take a large tin pan, line it with the trust,
put in your meat and pour in your gravy
from the fat; make it nearly fnfi, cover it.
over with cru-t, and leave a vent; bake in
a modern oven two hours and a half.

roofs instead of cutting it,; peal off the
skin from the stalks, and cur. it into small
pieces, put them in the pie with plenty of
brown sugar ; cover the pie and bake, like
apple, in a deep dish

Unruly Milch Cows.
It is no wonder some cows are fractious,
they are treated so roughly. Why kick,
pound and bawl at them? It only makes
matters worse, it makes the timid ones
shyer, and the spirited ones ill natnred.
We urge kindness not only as a matter of
humanity, but of profit and patriotism—
aye, profit to your heai t, profit to your pock
et. profit to your country. It is vain to
try and whip or frighten a cow into quiet
ness and docility. So treated, she dreads
and hates to sec the milk pail arid stool
coming, and will prepare herself for a bat
tie. How can she stand patiently and give
down milk, while expecting to receive hard
thumps.
Suppose her to be treated kindly—a lit
tle salt or some other reiish given to her a
few times, kind and soothing words spoken,
and a little caressing with the hand. If
somewhat restless as first, keep your tern
per and follow her up with daiiy kindness.
The result will surely c„me. ft he will
t-oon know what to expect from her milker,
and will show her likings by unmistakable
signs. No person who cannot control his
passions, and speak low, and be always gen
tle, should he allowed to milk a cow. It
is f>t importance, too, to milk, at regular
hours. There should seldom he a change
of milkers.
A successful dairyman once observed to
an agricultural editor, that one of the se
crets of his success lay in the kind treat
ment ho gave his cows. They were driven
to and from the watering place leisurely.
No dogs were allowed to distress them. N't>
hired man was suffered to beat or to scold
at them; whoever did so, was discharged
at once. '1 lie cows were well fed and were
allowed o take their own time in all tb.r-ir
oiovcnicnt3 especially in warm weather.
LJcing so treated, and milked regularly and
clean, he believed that lrom fifty to a hun
dred lucre pounds of cheese could be made
per season from eacli cow, than if they had
been kicked and frightened, and otherwise
roughly handled.

CART. JOEL PRATT, of the 6liip Marion, writes from
Boston, 20th April, 1854:
