From Peterson's Magazine for August.
Rich Custard. —Boil a pint of'milk with
lemon peel and cinnamon; mix a pint of'
cream and the yolks of eight eggs well J
beaten; when the milk tastes of the seas
oning, strain it and sweeten it enough for
the whole; pour it into tb.e cream, stirring
it well, then give tljg custard a simmer till ■
ola proper thickness. Do, not let it boil; j
stir the whole time one way. Or. —Boil a
pint of cream with some niaye. cinnamon,
and a little lemon peel; strain it,and when
cold add to it the yolks of four and the
whites of two eggs, a little orange flower
water, and sugar to your taste. A little nut
meg and two spoonsful of sweet wine may be
added, if approved. .Mix well, and bake
in cups.
Cheesecakes. —Strain the whey front the
curd of two quarts of' milk; when rathes
dry, crumble it through a coarse seive, and
mix; with six ounces of fresh butter, one
ounce of pounded blanched alntonds, a lit
tle orange-flower water, hall'a glass of rais
in wine, grated biscuit, four ounces of cur
rants, some nutmeg and fine
powder, and beat all the above with three
eggs and a half pint of cream till quite
light; then line the pattypans with a thin
puff paste, and fill them three parts full.
Iranrparcnt Pudding. —Beat eight eggs
ycry well; put them into a stewpan, with
half a pound of sugar pounded fine; the
same quantity of butter, and some nutmeg
grated. Set it on the fire, and keep stir
ring till it thickens. Put a rich puff-paste
round the edge of the dish; pour in the
pudding when cool, and bake it in a mod
erate oven. It will cut light and clear.
You may add candied orange and cit;cgt if
you like.
Devonshire Junket. —Make one pint of!
milk blood warm, P ut it into your dish with
two dessertspoonsful of brandy, one of su
gar, and one and a half of prepared rennet.
Stir it altogether, and cover it over until it
is set. Spread clotted cream over the top,
grate some nutmeg and sugar over it, then
eat it.
Gooseberry Cream. —Take a quart ol' j
gooseberries, and boil them very quick in
enough water to cover them; stir in half an
Ounce of good butter; when they become
soft, pulp them through a seive, sweeten
the pulp while it is hot, and then beat it
up with the yolks of four eggs. Serve in
a dish, cups or glasses.
