Com Meal Muffins.— Sealtl your meal after
sifting, thin it with e>M water: to a pint of
nj*ai add a full teaspoonful of good lard, f tit
to the taste; take two eggs, beat the yolks
well, add to the corn meal when e •!, stir all
up well; butter your mufEn sing? and the bot
tom of your dripping pan, have the pan quite
hot, add as the last thing the white of the
eggs beaten to a froth ; the batter should be
a little thicker than pancakes. Bake quYk.
Broxcn Bread —One quart rye meal; two
quarts Indian meal; two tablespoonsfu! <>t
ju-slassee; mis thoroughly with sweet miik ;
let it stand one hour, thenbbank n in asi w
oven.
itiee Cakes. —A correspondent of ' Field
Notes,' gives the following: While visiting
the West India Islands, I became very fond
of rice, cooked after this fashion: they boil
the in the usual maimer and let it coo!,
then add a little water cr milk to it, making
it about the consistency ofcomm n buckwheat
cakes. Add to this a little salt and a hand
ful of flour, and bake on a griddle as you
would batter cakes and buckwheat. An egg
will help some by making them bake quicker.
Try ir, housekeepers; I think you will find it
an excellent dish. Any dyspeptic can eat •
these rice cakes.
Water Muffins. —Sif: one qua:t of flour, add
one teaspo-'-nful of salt, make a batter with
tepid water, putting hrst into the flour two
:easpoonful of cream tartar; when just ready
to bake, add oue tcaspoonful of carbonate < f
soda dissolved. Bake on :i griddle, in rings.

potato into a deep plate, add the juice and
