[We take by permission another lot of
several valuable recipes, from the copy-right
work of Mr. Grozier, of Trentou, X. J.,
who was formerly largely engaged in the
baking business, preparing extracts, etc.
We have the testimony of several house
keepers to the value of the recipes publish
ed in our last.— Editor Am. Agriculturist.]
Sponge Cake. —To eleven eggs, slightly
beaten, add one and a halt pounds of tine
sugar, and beat up until very light, with a
wire beater, then flavor with extract of lem
on, and add about half a teaspoonful of sal
cratus dissolved in as little water as possi
ble ; mix this through, and add one and a
half pounds of sifted flour; work this in
gently, until smooth, with the beater. Put
the batter in small, greased tins, with a
spoon, and bake as soon as possible in an
oven or stove, hot enough for bread. If
made in one or two cakes, the oven must
not be so hot, and the salcratus and water
left out.
Almond Sponge. —With a wire beater,
beat up until very light and stiff, one pound
of tine sugar and twelve eggs ; flavor with
extract of almond; mix this in well, and
add one pound sifted flour ; mix in lightly,
but don't beat the paste. Pour it all in a
greased and papered pan, and bake imme
diately in a moderately hot oven. This
will make a three pound cake. The pan
should not be more than half filled with
the batter. It can be baked in smaller
cakes if desired.
Fruit Cake. —Mix together, and beat
until light, one pound of sugar and one
pound of butter; then add (few at a time.)
eight eggs, and beat up light; flavor with
extract of clove, (a little extract of nut
meg will improve it,) then one and one
fourth pounds of flour, mix it in partly,
and add one pound of currants, one pound
of raisins, one-fourth pound of citron, and
mix it all well through. More lruitcan be
added, if preferred. Bake in a moderate
ly heated oven.
Vanilla Drops. —Mix together one
iourth of a pound of sugar and one-fourth
of a pound of butter, add one egg; mix
and flavor with extract of vanilla; theu add
one-fourth of a pound of flour; work in un
til smooth, and drop in small lumps with a
spoon, far enough apart to spread on greas
ed pans. Bake in a moderately hot oven.
Wafers. —Mix well together half a pound
of sugar and half a pound of butter, add
two eggs; mix and fluvor with extracts of
rose and nutmeg; then add half a pound of
flour, and mix it well through. This paste
can be dropped on greased pans with a
spoon, far enough apart to spread. Bake
in a moderate heat.
Pound Cake. —Beat up together until
very light, one pound of sugar, and one
pound of butter, add 10 eggs, (eight will
do,) few at a time, and heat up light each
time, flavor with extracts of rose and nut
meg ; mix iu these, and add one pound of
flour, mix it until smooth. Put in a greas
ed and papered tin, and bake in a moderate
heat. A hot oven or stove is required, if
baked in small tins.
Washington Cake. —Mix together until
light one pouud of sugar and three-fourths
of a pound of butter; add eight eggs, few
at a time, and mix ; flavor with extract of
pimento, (extract of nutmeg may be used
if desired;) mix in one gill of milk, and
add one and a fourth pounds of flour; par
tially mix, and add half a pound of currants,
half a pound of raisins, and a fourth of a
pound of citron; mix all well through.
Put in a greased and papered pan, or two
pans can be used. Bake in a moderately
hot oven or stove.
Jelly Cake. —Mix one pound of sugar
and one pound of butter until light, add
eight eggs gradually, and mix ; flavor with
extract of orange, then add fourteen oun
ces of flour, and mix well through; then
spread the dough out in thin round sheets
on white paper, about a large tablespoon!ul
in each. Lay the papers on pans, and bake
iu a quick heat. Do not bake them too
much. When cold, take them off the pa
per and put them in piles of two or three
thick, with any kind of jelly or jam between
each layer; trim off the edges all around,
and silb sugar over them, or they can be
iced and ornamented.
