Good Veal Stuffing. —Take equal quan tities of Beef suet and crumbs of bread; chop the suet very finely; chop lemon rind, thyme, marjoram, and parsley very finely, and add them, also a teaspoonful of grated lemon peel, a little grated ginger, aud some pepper and salt; mix well together with egg. It will be an improvement to beat the whole in a mortar. Excellent Directions for Stewing.—Stew ing consists in subjecting meat for a con siderable time to a moderate heat in a small of water. No good stew for an early dinner can be made the day it is wan ted. The plan recommended is, to cut the meat in pieces of the required size, pack them closely together, covering them with cold water, or, what is preferable, broth ; ! place the stewpan where it will gradually warm, and keep it for some hours at heat considerably short of boiling. The albu men is thus dissolved, and the fibres so far softened and separated that the toughest parts become tender and digestible. The stew should be put away in an open vessel until the next day, when the fat should I e removed from the top, vegetables and seas oning added; it may be thickened with flour or meal, if required. Vinegar is sometimes employed in the process of stew- I ing; it acts by softening the fibrin, and so renders the meat more tender and digesti ble. Hot S/aic. —Cut a good cabbage iu half, and, with a sharp knife, slice it finely; put it into a stewpan with a piece of butter, and salt and pepper to taste; pour in just : water enough to prevent it sticking to the i pau; cover it closely, and let it stew ; stir | it frequently, and when it is quite tender, add a little vinegar, and serve it hut. Baker's Gingerbread. —The ingredients ' are: One quart of molasses, two teaspoons- ! ful of salcratus dissolved in a pint of sweet | milk, half a pound of melted butter, (pour j the butter into the molasses,) three ounces of ginger, a piece of alum the size of a cherry, and enough flour to thicken it prop- f erly. The alum is to be added in, last of! all the ingredients. Pint Cake. —The ingredients are: One pint of dough, one teacupful of sugar, one teacup!ul of butter, three eggs, one tea spoonful of pearlasb, raisins and spices. Crullers. —The ingredients are: Half a pound ul butter, two pounds of sugar, twelve eggs, a wincglassi'ul of brandy, a wineglassful of wine, a wineglassful of rose water, a teaspoonful of nutmeg and cinna mon, and three pounds of flour. Roll the paste out very thin; cut out the cakes, and boil them in lard. Lemon Drops. —Dip a lump of treble refined loaf sugar in water; boil it till it becomes stiff, take it off the fire, rub it with the back of a silver spoon to the side of your pan ; then grate in some lemon peel: boil it up, and drop it on paper. Waffles —Made with Bread. —Soak hall it loaf of bakers' bread in a pint of milk, add sufficient floui to make a tolerably tliin batter, also some salt; lastly, put in three eggs, beaten very lightly. Duke iu waffle irons. Silver Cake. —The ingredients are : One pound ot sugar, three-quarters of a pound of butter, mace and citron to vour liking, .the whites of fourteen eggs, one pound of flour. A very nice cake indeed. Cocoanut Cake. —The ingredieuts are : Three-quarters of a pound of almonds, two cocoanuts, grated, one pound and a half of sugar, and some whites of eggs. Orange Shrub. —To every five bottles of rum put the juice of thirty Seville oranges, eight or ton lemons, the peel of eight or anges and four lemons cut very thfn, and three pounds of loaf sugar. Stir this well twice or three times a day for three or four days, then strain it through a jelly-bag and bottle it, and it will be tit for use!
