As a general rule, it is economical to buy
the best articles. The price :s, of course,
always higher; but good articles spic
iest. It is a Sacrifice of money to buy
poor flour, meat, sugar, molasses, butter,
cheese, lard, Ac., to say nothing *of the in
jurious effect upon the health.
Of West India sugar and molasses, the
Santa Cruz and Porto Rico are considered
the best. The Havana is seldom clean.
White sugar irom Brazil is sometimes very
good. Refined sugars usually contain
most of the saccharine substance; there
fore there is probably more economy in
using loaf, crushed and granulated sugars,
than we should at first suppose.
Rich cheese feels soft under the pres
sure of the finger. That which is very
strong is neither good nor healthy. To
keep one that is cut, tie it up in a bag that
will not admit flics, and hang it up in a
cool dry place. If mould appear on it,
wipe it off with a dry cloth.
The small, white sago, called pearl sago,
is the best. The large, brown kind lias an
earthy taste. These articles and tappioca,
ground rice, Ac., should be kept covered.
The best rice is large, aud has a clear
fresh look Old rice sometimes has little
black insects inside the kernels.
The crackeb cocoi is the best; but that
which is put up in pound papers is often
very good.
To select nutmegs, prick them with a
pin. If they are good, the oil will instant
ly spread around the puncture.
Keep coffee by itself, as its odor affects
other articles. Keep tea in a close chest
or canister.
Bread and cake should be kept in a tin
box or stone jar.
Cranberries will keep all Winter in a fir
kin of water in the cellar.
Potatoes should be put into tho cellar
as soon as they are dug. Lying exposed
to tlte Sun turns them green, and makes
them watery. Some good housekeepers
have sods laid over barrels of potatoes not
in immediate use. to prevent them from
sprouting in the Spring, turn them out
upon the cellar bottom.
To thaw frozen potatoes, put them in hot
water. To thaw frozen apples, put them
in cold water. Neither will keep long af
ter being frozen.
Stove Polish. —Make a weak alum wa
ter, and mix your British lustre with it;
let the stove be cold, and brush it with the
mixture ; then take a dry brush and lustre,
and rub the stove till it is dry. Should
any part, before polishing, become so dry
as to look gray, moisten it with a wet
brush, and proceed as before. By two ap
plications a year it can be kept as bright
as a coach body.
Bullet Biscuit. —Take two teacups of
butter, and rub it well in some dry flour;
then add two eggs well beaten, and one
quart of sweet milk, with flour enough to
make it very stiff dough. Knead it well,
and then add to it one half its size of light
dough; knead together and let it rise.
When light roll it out and cut into round
cakes, prick with a fork and Lake.
Scouring Knitcs. —A small clean pota
toe, with the ends cut off, is a very conve
nient medium of applying brick dust to
knives, keeping it about the right moisture,
while the juiee of the potato assists in re
moving stains from the surface. We can
get a better polish by this method than
any other we have tried and with less la
bor.
If armless and sure cure far ]\urts. —
Take two or throe cents worth of sal am
moniac, disolved in a gill of soft water, and
V&t the warts frequently with this solution,
and they will disappear in the course
of & sr.e.et or two.
Doughnuts. —lake one quart of light
dough, a piece of an egg, and one halftea
cupiul of sugar, knead well together, roll
out thin, cut any form you wish, and drop
in a pan of boiling lari. Remove them
when of a light yellow color.
Cool:ies. —Five cups of flour, two of su
gar, one of butter, one teaspoonful ofsaler
atus, three eggs, and some caraway. Bake
thin.

haps of sufficient importance to merit a reply.
The Commissioners have no desire to eonr.V
any part of their expenditures, and heicav :\v
their willingness to make explanations, so la:
as lies in their power, to any one who may
call upon them. In many of the suggestions
of that communication they see nothing
unreasonable, though it would require much
labor to give in detail the various items l a
thinks ought to be published. Others
(fox * lor instance) are paid by the Treas
urer on certificates from Justices of the
Peace, and are therefore riot properly within
the jurisdiction < f the Commissioners; oth
er. are probably so interwoven with general or
der- as to render a separation extremely dif
ficult. They however subjoin such items as
may be ot intt-re-t, with the remark that so
far as tho county debt is concerned, no part
of it was contracted during the past year
