BRUNSWICK JELLY CAKE.
Stir together hail a pound ol powdered
white fugar ami half a pound ol fresh
butler till perfectly light. Beat the yolks
of three eggs till they become very thick
and smooth. Sift three-quarters of a
pound of flour, and pour it into the beaten
eggs and butter ami sugar.
Add a teaspoonful of mixed spice, (out
meg, mace and cinnamon.) and half a
glass of rose water. Stir the whole very
well, and then lay it o:i your paste board,
which must be first sprinkled with flour.
It will be a soft dotigli ; but if it be so
moist as to prove unmanageable, throw on
a little more tlour. Spread the dough in
a sheet about half an inch thick, and cut
it out in round cakes with the edge of a
tumbler. Lay the cakes on buttered pans
and bake them about five or six minutes.
When thev become cold spread over ihe
surface of each cake some jelly or mar
malade. Then beat the white oi three or
four eggs uil it stands alone, and add to it
by degrees (continuing the beating a suf
ficiency of powdered ioal sugar to make
it as thick as icing; flavor it with a few
drops cf esseuco of lemon, and with a
spoon heap it up on each cake, making it
high in the centre. Put the cakes into a
cool oven, and as soon as the lops become
ola pale brown color, take them out. —
These cakes are remarkably fine.
SNOW BALLS.
Pare five large baking apples; take out
the cores with a scoop, and till the aper
tures with orange or quince marmalade ;
then make a little good hot paste, and roll
vour apples in it, (make the crust of an
equal thickness,) and put them in a tin
pat:, and bake tliem in a moderate oven.
When you lake them out of the oven,
make icing for them the same way as lor
a plum cake, and ice them all over with it
about a quarter of an inch thick ; then set
them a good distance from the fire till they
are hardened, but tdkc care you do not let
them brown. Put one in the centre of a
china dish and place the others around tt.
