Take one touspoonful ol red lean, one
tnblespooniul ol f astile soap, mix tlieni
with as weak lev as will make it soft
enough to spread like a salve, and apply it
on the first appearance of the felon, and it
will cure it in ten or twelve hours.
Method of Curing Hams.
The llams of Maryland and \ irginia
have long enjoyed a wide celebrity. At
the last exhibition of the Maryland State
Agricultural Society lour premiums were
awarded for Hams." We are informed by
those who had the opportunity' of examin
ing them that they are ol first-rate quality .
The following are the receipts by winch
the Hams were cured, ,'lmerii an rai

T. IT HAMILTON'S RECIPE.— 1 ust pre
mium. To every 100 pounds of pork
take eight pounds ol (i. A. salt, two ounces
saltpeter, two pounds brown sugar, one
and a half ounce of potash, and lour gal
lons of water Mix the above and pour
the brine over the meal, after it has lain in
the tub some two days. Let the Hams
remain six weeks in the brine, and then
dried several days before smoking. 1
have trenerullv had the meat rubbed with
tine salt when it is packed down, lite
meat should be perlectly cool before
packing.
J. GREEN'S RECIPE.—Second premium.
To 1.000 pounds ol pork lake hall a
bushel and halt a peek ol salt, three
oouruls ol saltpetre, three pounds ol sugar,
and two quarts oi molasses. Mix ; rub
the bacon with it well; keep it on for
three weeks in all: at the end of nine days
lake out the hams, and put those which
are at the top, to the bottom.
R. BROOKE, JR s. Km IPE.—Third pre
mium. Due bushel oi line salt, halt bushel
ground alum salt, one and a liali pounds
saltpetre, and one and a half pounds sugar
to a thousand pounds ot pork ; leave lie in
pickle four weeks ; hang up and smoke
with hickory wood until the rind becomes
a dark brown.
R. ]). SLIXOLM r> RECIPE. —Fourth
premium. To 100 pounds green Hants,
take eight pounds G. A. salt, two pounds
brown sugar, or molasses cquivelent, two
ounces saltpetre, two ounces pearl ashes,
lour gallons water; dissolve well; skim
nting oil" the skum arising on the surlace.
Rack the Hams compactly in a tight ves
sel or cask, rubbing the lleshy part with
line salt; in a day or two pour the above
pickle over the meat, taking care to keep
it covered with pickle. In tour to six
weeks according to the size and weight of
the Hants, (that is to say, the longer pe
riod for heavier hams.) hang up to smoke,
hock up ; smoking with green hickory
wood. 1 have put up my hams lor the last
twelve or fifteen years by the above recipe
with uniform success, equal at all times to
the sample now presented.
