As a rule,' wo keep ourmeals.too long
in tho brine, and too long in tho smoke
house. This Is true especially of ham
and side-bacon for family use. When
meals are intended to keep all summer,
they must of course bo penetrated by
salt, and well suioked; but- for winter
and early spring use it Is- far better to
salt lightly, and smoke very little. The
English farmers have the art of doing
this a great deal belter thah we. In
many cases tho bacon Is only two days
in tho p!ckle,then dried forseverahlays,

not to boiling. For boiling, longer
salting is necessary, and as a rulo, dry
salted bains are preferred. They are

in a dry atmosphere. Sometimes it is

beyond anylhg we commonly get. Great
quantities of choice hams arc shipped
from this country to Great Britain, and
as we learn, are thus handled. They
arc shipped in just as' weak briuo as
oxperienco has shown will keep them
from talntlngon the voyago. On arrital,
the casks are opened, and thrown to
soak in a great -at. When tho salt Is
sufficiently drawn from the.surfacc,tlicv
arc taken out and beaten up Into their
orlgiual plump form, then tho trimmers
take off a shaving all around ou the
flesh side; they are exposed a day in the
sinokt) houso, just to give them a golden
russet tint, and they aro then exposed
for sale. We will warrant that slices of
such hams, well broiled, or even filed,
will In every quality, beat tho native
American homo-cured article, out and

Stripping ths Leaves of Nursery Trcos.
When the growtli of deciduous trees
is completed, and tho wood thoroughly
ripened, there is no further use for the
leaves, and they are dropped morn or
less rapidly, as the case may be. The
currant and tho plum ripen their leaves
early, and often shed them In August,
while the leaves of tho peach are very
persistent, and do not drop until after
hard frosts. The leaves of some species
of oaks, remain on the tree all winter,
or until pushed olf by the new growth
in spring. Frost hastens the dropping
of all leaves, and an early frost Is a great
assistant to the nurseryman, who often
pays large sums for stripping his salable
trees In the fall. Boys, and sometimes
women, aro employed to go through tho
rows, and strip the limbs, by a rapid
movement of the hand, from tip to base.
If tho leaves are ripe, they drop almost
with the touch. Thu strippers aie paid
sometimes by the day, and sometimes
by tho hundred or thousand. The most
unpleasant stripping is that of goose
berry bushes, and is performed with
leather gloves. Sometimes tho bushes
are buried for a few days In moist cellar
sand, when the leaves blacken and drop
off. All tills Increases tho expenso of
handling trees In the fall, and in the
case of peach trees, many perfer not to
sell until spring, or until very late in
tho fall, unless a good price cau be ob
tained. The removal of tho leaves
before the ripening of the wood, causes
the shoots to shrivel and die, and though
the entire tree may not be lost, Its
vitality is apt to be injured. Large
amounts of nursery stock have been lost
In this way, the cause not being sus
pected, and the damage laid to improper
packing, or to drying up while In
transit, during very hot weather. Am.

not to mind It, but not to turn his head,
when ho feels the pull upon one rein,
