Hcw to Carvo.
. ..Carving it very deBtrnble ncoom-
filifclinicnt fur both laUic end gontlo
tntn, and ehdiild bo taught. One enn
noi Wuraii by tuition, but .by. pine-
.tri.'joincil iy a Bmnll b1!co of theory.
It is true that tho ' French ntylo of
'.serving'nieat sliccJ is fust buniebiii;
' the necessity of carving nt tlio tablo
of the rich, but in middle life, where
siidi clcgnncits nro not practiced, a
knowledge of carving should bo part
of a boy's or girl's education. How
often do wo hear a person aay "Oh,
excuso.mc, I can't carvoj I novcr
tried." Or, If It- bo attempted, one
,0od finds himself sadly cmbarrsssod.
11a grasps tho knife and fork deipor-
atolv. He has learned that a sllco of
the breast of a turkey is a dainty ;
that tho wing is jrood ; the second
joint also ; that tho leg is not so good.
' Hut it is not an tay task to scperate
them ; and ho thinks be would rather
chop wood than cut turkey. He does
not know that on the back of tlio tnr-
kcy lies a dulicious morsel culled the
oyster, and that the side bones below
- the second joint areconsidered tidbits.
"l'lrit must be taught bim. Ladies
ouj'rit especially to muke carving a
'study; at their own bomos the task
often dovolvcs upon them, and they
should be able to perform it wilb ease,
and not be forced to accept the assis
tanoo of visitors, who would probably
dread- the operation. Tho platter
should be placed so near the carver
that he has full control over It; if far
off nothing can prevent an ungrace
ful appearance A sharp knife is re
quiaito, and it thin and well tempered
blade. Ia carving turkey, cut off the
wing nearest to you first, the leg and
second joint ; then slice the breast
until a rounded piece appears; insert
lbe knife between them and separate
them this part Is the nicest bit of the
breast; next comes the "merry
thought." After this, turn over tho
.bird a little, and just below the breast
you will find the oyster, which you
separate as you did tho inner breast.
The sido bono lino beside ' tho rump,
and the desired morsel can bo taken
without separating the whole bone.
Trocccd tho same with tbe other sido.
The fork need not be removed during
the wholo process. An experienced
carver win uisseci a iowi at easy as
you can break an egg or cut a potato
He retains bis seat, manages bis hands
and elbows artistically, and is perfectly
at ease. There is no difficulty in tbe
matter, it only requires knowlcdo and
practico j and theso should be taught
iu the family, each child "taking Lis
own turn.. .Cbitkant. and- partridges
ore carved in the same ytay. Hearth
and Home.
bdMETi.ME. It is a sweet, sweet
song, wnrblcd to and fro among tbe
topmost boughs of tho heart, and
filling tho whole air with such joy
and gladness as tho songs of birds do
when tho summer morning comes out
of durkncfs, and day is born on tho
mountains. Wo buvo ull our posses
sions in tho future which we call
"sometime." Beautiful .flowers and
singing birds ' aro there, only our
hands seldom grasp tho one, or our
cars hear the other. Eat, oh, reader,
bo of good cheer, for all the good
there Is a golden "somotime;" when
the hills and valleys of time aro all
passed ; w hen the wear and fever, the
disappointment and sorrow of lifoaro
over, then thoro Is the place and the
rest appointed of God. Oh, home
stead, over whoso roof lull no shadows
or even clouds; and over whoso
threshold tho voice of sorrow is never
heard; bnilt upon the eternal hills,
and standing with thy spiret and pin
nacles of celestial beauty among the
palm trcee of the city on high, thoso
who love God shall rest under thy
sbudows, where there ia no more sor
row, nor pain, nor tho sound of weep
ing "sometime." rrcntice.
Till 1'P.uNCII COLONT DEMANDED
by Germakt. The report from Lon
don that ono of the German condi
tions of peaco ia the. cession of the
colony of rondirherj-, Is possibly cor
rect, though not official. Neverthe
less, since it rwrn certain that Ger
many insists upon getting a colony,
wo should not L mirpriorj If Uitj
province of Buigon is selected. Pon
dichery is situato In India, and al
though it has prospered under French
rnlo, the severity of the climato has
limited tlio number of Europeans liv
ing in it to a mere handful. Saigon,
on tho contrary, possesses a salubrious
climato, and is altogether a more val
uable colony. It is far more populous
than Pondichcry, its commerce is
more extensive and the field of com
mercial enterprise which it would open
for Germany would bo greatly larger
than in India. Of course, in the ab
sence of any official statement, all ro
ports on this, as on other matters
concerning the Gorman torms, cannot
be implicitly relied upon, and il may
be that neither Pondichcry nor Saigon
will be selected. A'., Y. Herald.
