Tomato' and Onion Fiekles. To one
'jiinrt of of vinegar, fuld halfpound of
crown suirar. halt'au ounce ol'cloves,
and ono ounce of einuanion buds,
elect small onions, boil in tho vino- J
,;ar three minutes, skim them out;
when cool, lay them in a crock ; first
a layer of onions, and then tomatoes,!

place.

er them with a cloth ; turn them over
n week brine, boiling hot ; cover close

move to cold vinegar, with horse rad

ripe enough to be soft ; wash and pick
l hem ; make a brine so strong it will
not desolve all of the salt ; boil and
-kirn, and pour it on tho tomatoes.
Let them stand eight days, pour off,
cud put on a week vinegar, which let
.cumin the same length of time, then
remove, put on strong vinegar, and
whatever spices suit your taste; tie
up, and put away. You will have
nieo pickles, and those that will keep.

'ize, and slice tliem thin ; scald them
au instant in tailed water ; then lay
them in a jar with venegar, cloves
and cinnamon.

Winslow in the Jfain Farmer, saj-s
that the Farmer should ascertain the
character of his cow's milkseperaU ly,
fattening for beef those whoso milk
doos not yield yellow butter. Then
his firkins should be made of sweel
wood ash, maple, oak or spruce, and
thoroughly fatured with strung pickle ;
work out all butter milk with u wood
en ladlo j then take for seasoning one
pound of good salt, ono half pound
pure whito sugar, and two ounces
saltpeter; mix thoroughly together,
and use ono ounce of this preperation
for every pound of butter. The above
ipiantity is sufficient for twenty six
pounds of butter. The butter should
be put, into tho firkin solid, beating it
down smooth with a wooden pestle ; cov
er it with a linen cloth with sweet
hot tallow or beeswax, taking care to
wring out all the tallow or beeswax
you can afterdipping the cloth. This
cover will include tho layers; simply
stamp down each layer smooth with
the pestle, and cover with cloth until
tho next layer is ready. Butter pack
ed in this manner will neither grow
6oft in warm weather nor crumble in
cold weather, and it is better ono
year old than when first made. It
will sell for from five to six cents per
p mud more than common butter.

istead of two ounces of saltpeter, and
think it an improvement. Let far
mers try both.
