'P,.n ,.nn,lu Watermelon Pickles. inn pounds d watermelon rinds boiled 111 pure J water until they arc tender, drain tllO water oh", then make a fyrup of two pounds oi sugar, one quart ot vinegar half an ounce of cloves, one ounce of l innamon. The syrup to boiled and poured over the melon rinds boiling hot. Drain the fyrup off and let it oino to a boil, and pour it over the melon three days in succession. The rinds prepared in thin M ay liirsui jiass 8 any pickle I ever tasted. It will keep from one year to another. Tomato and Onion Pickles. To one uart of of vinegar, add half pound of drown Hugar, halt an ounce oi cloves, :ind one ounce of cinuamon buds. Select small onions, boil in the vine gar threo minutes, ukim them out; wheu cool, lay them in a crock; first a layer of onions, and then tomatoes, (the small plum tomato is the best,) and when the vinegar is cool pour it over them and set them in a cool place. Pickled Cucumbers. Wash and cov er thorn with a cloth ; turn them over a week brine, boiling hot ; cover close ly. Lot them remain a few days, then rinse tho brine from them, and re movo to cold vinegar, with horse rad ish and spices to taste; keep covered closely. Pipe 'Tomatoes. rick them before ripe- enough to be soft ; wash and pick them ; make n brine so strong it will not deeolve all of the salt ; boil and skim, and paur it on tho tomatoes. Let them stand eight days, pour oft', and put on a week vinegar, which let remain tho eamo length of time, then remove, put on (strong vinegar, and whatever spices suit your taste ; tie up, and put away. You will have nice pickles, and thoso that will keep. Green Tomatoes. Take tomatoes after they have grown to their full size, and slice them thin ; scald them an instant in salted water; thin lay them in a jar with venegar, cloves and cinnamon. JJiAs butter is now so very cheap, it atlordaa tine oppertunity for "put ting up" for times when the article will bo dearer. Wo find the following which is useful at this time in the Ru ral New Yorker. The Art of Bltlkk Marino. X. Winslow in the Main Farmer, says that tho Farmer should ascertain the character of his cow's niilkseperatcly, fattening for beef thoso whoso milk doos not yield yellow butter. Then his firkins should be made of sweet wood ash, maple, oak or spruce, and thoroughly natured with strong pickle ; work out all butter milk with a wood on ladle ; then take for seasoning one pound of good salt, one half pound pure white- sugar, and two ounces saltpeter; mix thoroughly together, and use one ounce of this prrperatiou for every pound of butter. Tho above quantity is sufficient for twenty six pounds of butter. The butter should bo put, into the firkin solid, beating it down smooth with a wooden pestle ; cov er it with a linen cloth with sweet hot tallow or beeswax, taking care to wring out all the tallow or beeswax you can alter dipping tho cloth. Thi s cover will include the layers; simply stamp down each layer smooth with the pestle, and cover with cloth until the noxt layer is read'. Butter pack ed iu this manner will neither grow soft in warm weather nor crumble in told weather, and it is better one j ear old than when first made.
