Bad milkers should not bo tolera ted in a herd,; better pay double the price for good ones. 2. Straining is quite simple but it should pc | borne in mind that two pans about half full each will produce a greater amount of cream than the same milk if in but one pan;. the rea son of this is the greater surface. 3. Scalding is quite an imporlant feature in the way of making butter in cool weather; the cream rises much quicker, milk keeps sweet longer, the butter is of a better color, and churns in one half the time. : 4. Skimming should always be done before the milk becomes loppered: otherwise much of the cfeara turns into whey and is lost. 5. Churning, whether by'hand or otherwise, should occupy fifty minutes. . 6. Washing in cold water is one of its pre serving qualities, and should be continued until it shows no color of the milk by the use of the ladle ; very hard water is highly charghcd with lime, and. must in a measure impart to it alka line.pfopcrlies. - 7. Packing is done with the hands or with a butter mail, and when butter is put into wopd . en vessels, they should bo soaked two or three days in strong brine before usings After each packing, cover the butter with a wot cloth, and put a layer of salt upon it; in this Way' the salt can easily be removed at any time, by simply taking hold Of the edges of the cloth. Buttter made in this way wilkkcep any length of time required. Sad Effects of Religious Excitement.— The insanity of Mr. and Mrs. 0. 11. Peek, of Providence R. 1., and the death of the latter, as the result of over excitement in religion, is mentioned in the Providence (R/X.) papers.— The Post, giving an account of the circumstan ces before Mrs. Peak’s death, says;—Both of them have felt much interestin'the revival nojv' progressing here, and recently have allowed re ligious subjects to so constantly press upon their thoughts as to prevent them from eating or. sleeping with much regularity. Within a few. days, both have manifested unmistakable signs of insanity—and Mr. Peck, when not under the influence of, chloroform, has had to bp hand cufibd, to prevent him from injuring himself • and those about him. Mrs. Peck, as is usual in such cases, believed that Odd had comman ded her to fast, and has thus refused food for several days save oh two occasions. She had also imagined that her children had been, com manded to fast; insisted that they Should refuse food, and was so reckless fn her chastisement of them, when.they disobeyed her, that, she also had to be confined. ’ ■ Popular Sovereignty.— The editor of the •Mercer (Pa.) Register is a bachelor, and he says that the reason ho won’t marry is as fol lows: .- ‘ couldn’t think of it.
