Citemtits—Two coae cups of _•tigar, one coffee cup of milk, four eggs, six tablespoonfuls 0f lard, two teaspoonful , , , of cream of tartar, - one teaspooful of ;lour to make stiff enough to roll ; fry in boiling lard; spice to suit the taste. • WINTER, SAUCE OF TOMATOES.- One gallon of strained tomato juice, two pounds of sugar, seven tea spoonfuls ofsalt, finer tablespoonfuls of black pepper, half a tablespoonful of allspice, three tablespoonfuls of mustard, half a pod of red pepper, a little horse-radish. Boil well, and just before taking off the fire add one quart of good vinegar. TOMATO AND BEEF STEW—Slice three pounds of lean beefand seven moderate-sized tomatoes with one onion. Cut the tomatoes up into „i ptlag the onion fine. Stew slowly add salt," a - 1m cloves, and, just before it is done, a little butter and half a gill of eat sup... The remains of this dish may be kept and heated over the next day, if desired. PLAIN PUDDING—Lay dry bread in the oven till it is brown, then roll line, and put a layer in the bot tom of a buttered dish; then put on a 14er of chopped sour apples; over this sprinkle sugar, a few bits of butter and a little ground cinna mon ; another layer of the crumbs, and so on tillthe dish is full, having bread for the last layer with butter in little bits over it. Pour boiling water on enough to moisten, and bake till the apples are done. This i: but a tcycnty dollars a ton, and is - much more profitable for feeding than hay. It is very large ly used when hay is under twenty dollars a ten, and the use should be ereased as the price of hay rises.
