The Itousekeeper.
About Tonuttocs—lf very ripe, they
will skin easily, if not pour scalding
water on them, and let them remain
in it for four or five minutes. Peel and
put them.into a stow pan, with a table
spoonful of water, if not very juicy; if
so no water will be required. Put in a
little salt, and stew them for half an
hour, then turn them into a deep dish
with buttered toast. Another way of
cooking them, which is considered
very nice by epicures, ie to put them
in a. deep dial), with fine bread
crumbs, crackers pounded fine, a layer
of each alternately; put small bits of
butter, a little nutmeg and sugar.
Have a layer of bread crumbs on top.
Bake it three-quarters of an hour.
Scalloped Tomatoes—Scalp ripe to
matoes and put them in a dish with
bread crumbs, layer over layer seas
oning with salt and red pepper.
Have the bread crumbs on the top
and bake three hours.
Tomatoes to Stuff—Take some fine
tomatoes and scoop the inside out,
which should• be sot aside until requir
ed. Chop or mince fine some beef,
mutton, or other fresh under done
meat; mix with a little pe It,
and little sweet herbs; or make a force
meat and mix with the scooping of
the tomatoes; form into a good con
sistency and stuff the inside of the ve•
getable with the mixture. Set the pre
pared vegetables in a dish with a little
lard in a slow oven, and bake until
tender; then serve with the liquor
that exudes during the process ; but
if not brown enough, coler by moans
of a salamander held over the top of
each.
A good rich gravey poured over all
improves the flavor very much. This
is the beet way to dross these vegeta
bloc, and serves also to make cold meat
palatable, in addition to forming a
pretty and economical side dish.
To Keep Tomatoes—Peel the toma
toes, and keep them in a kettle over
the fire till they boil for ten or fifteen
minutes. They are then ready for
sealing. The half gallon sized cans are
the best for the purpose. Fill ono with
hot tomatffes, wipe off from the ce
ment any juice, and put on the cover.
The contents of the can will so heat
the cover that it is only necessary to
press it firmly into place; When first
closed, as the confined steam is elastic,
it will rise up, and a weight, say five
pounds, mast bo used to keep it down ;
or a piece of ice may be laid on it,
which will condense the steam within.
If the can is larger than the weight,
gat a board on first. When the can ":
and bottom will concave; if the ce
ment of the cover should not be suffi
ciently melted, hold on the top a heat_
ad flat-iron till the cover goes down in
to its place.
Tornata Vinegar—No great skill is
required to make the article. Express
the juice, and put in any clean vessel
exposed to the air in a warm place,
and it will soon become vinegar. It
will make a stronger vinegar if molas
ses is added to the juice.
Sweet Green Tomato Pickles—Peel
and slice two gallons gra en tomatoes, fi vo
tablespoonsful of ground mustard,three
gills of mustard seed, two tablespoons
ful of ground pepper, two tablespoons
ful of ground cinnamon, ono table
spoonful of cloves, one pound of brown
sugar, three quarts of vinegar. Boil al
together until quite done. If one
choose, they may use one spoonful
ground and and a portion of cinnamon
bark. A. little celery tops give a fine
flavor. These are excellent.
Superior Corn Bread or Cakes—Mide
without eggs or milk. Take three
cups of corn meal, one and a half cup
wheat flour, three-fourths cup lard,
three-fourths cup brown sugar, four
teaspoons baking powder; one teaspoon
salt and water enough to mix a batter
that will pour. Bake with a quick fire
in a pound cake dis:3, three-fourths of
an hour, or in a bread pan ono or two
inches deep, or as griddle cakes. It
makes a good pudding with dip. Try
it.
A Receipt Worth One Thousand Dal
lars.—The Ohio Cultivator says : Take
one pound of sal soda and a half a
pound of unslacked lime, put thou in a
gallon of water and boil twenty minu
tes ; let it stand till cool, then drain off
and put in a strong jug or jar, soak
your dirty clothes over night, or until
they are wet through, then wring
them out and rub on plenty of soap,
and in one killer of clothes well cover
ed with water add one teacupful of
washing fluid ; boil half an hour brisk
ly, then wash them thoroughly through
one suds, tins, and your clothes will
look better than the old way of wash
ing twice before boiling. This is an in
valuable receipt, and I want every
poor, tired woman to try it. I think
with a patent washtub to do the little
rubbing the washerwoman might take
the old Bible and compose herself on a
lounge and let the washing do itself.

one day and a famine the nest. Be not
content with small sheep and light flee
ces. With all our improvements in this
department, there is still great room
for more. A Spanish proverb says,"The
eye of the master fattens the horse."
