HUNTINGDON, PA.
DOMESTIO REOEIPTS
BOILED INDIAN PuDDINO.—In one
quart of boiling milk stir enough meal
to make a stiff batter ; add ono cup
chopped suot,.one egg, half a cup of
sirup, salt, one cup of raisins or dried
fruit. Boil in a bag two hours. Servo
with cream and sauce.
RED CURRANT JELLY.—Put rho cur
rants into a jar, in the oven, allowing
them to remain till the juice is well
out of them. If currants ure plenty,
and you wish the jelly quite clear and
of excellant color, strain but ;
not mashing and squeezing the pulp
as some do. To a pint of sirup add
a pint of well pounded white sugar
made quite hot. Before adding the
sugar, boil the sirup very slowly* for
two minutes; then put in the hot su
gar and hoil ten minutes. Pour into
common tumblers or small,basins, and
sot to stand a while in the sun with a
little gauze or net placed over thein
to keep the insects out when you are
ready to store thorn, cut nice white
paper, the size of the surface of the
jelly; dip in brandy, if you have it,
and place close upon the jelly. Cover
the jars. .
ItABIIERRY VINEGAR.--Every house
keoper should endeavor to have at
least a small quantity of this delight
ful beverage. In cases of fevers it is
indispensable, and will often quint and
Booth when nothing else will. Put two
quarts of red rasberries, nice and fresh,
into a jar, and pour over them a quart
of good vinegar. Let it stand twenty
four hours. Strain through a flannel
bag. Pour this liquid ovor two more
quarts of fresh berries, and again lot
it stand twenty four hours. Strain
again. Allow three quarters of a
pound of loaf or good white sugar to
every pint of juice. Stir well into the
liquid, put into a stone jar, cover close
ly, and sot to stand in a ketttle of boil
ing water to be kept boiling for a hour.
Strain it, and bottle ready for use. A
tablespoonful to a tumbler of cold wa
ter is the manner of using it.
To COOK Comm.—Take a piece of
fish about three inches square. Fresh—
en .for fivo minutes in boiling water.
Take it out, and shred very fine. Add
one quart of milk and two tablespoon
full of cream. Set on the stove to boil,
while you prepare thickening in the
following way. Take a tablespoonfull
of flour and a little butter and pepper.
Mix well together, and add a very lit
tle milk or water to make a batter.
This should be perfectly smooth and
free from all lumps. Add to the milk
and fish, boil up and serve..
HOW TO COOK A BEEFSTEAK. —A
beefsteak ought always to be broiled
and never fried; but the following
method of cooking is recommended by
Mrs. Hutton, which even those who
aro accustomed to frying may be wil
ling to try:
"The frying pan being wiped very
dry, place it upon the stove an let it
become hot—very hot. In the mean
time mangle the ste.4,k—if it chance to
be sirloin, so much the better—popper
and salt it, then lay it in the hot, dry
pan, which instantly cover as tightly
aspossible. When the raw flesh touch
es the heated pan; of course it seethes
and adheres to it, but in a few seconds
it becomes loosened and juicy. Every
half minute turn the steak ; but be
careful to keep it as mach as possible
under cover. When nearly done lay
a small piece of butter upon it ; and if
you want much gravy, add a table
spoonfull of strong coffee. In three
minutes from the time the steak first
goes into the pan it is ready for the
table. This method of cooking makes
the most delicious, delicately broiled
steak, full of juice; yet remaining the
healty beefy flavor that any John
Bull could require.
"The same method may be applied
to mutton chops, only they require a
little longer cooking to.prevent them
from being rare. An excellent grafy
may be made for them by adding 'a
little cream, - thickened with a pinch
of flour, into which, when off the fire
and partly cool, stir in the yolk of an
egg, well beaten."
Washing.
On the evening previously to wash
ing, all the clothes should bo gathered
up and assorted ,—woollens, colored
clothes, unbleache cottons, and linens
and fine clothes, into their separate
bundles.
Except wollens and colored clothes,
all other kinds should bo put 10 soak
over night, the very dirty parts having
soap rubbed on them. If you use a
washing fluid, it is usually in the soak
ing water; if you use no wash mixture,
the next morning wring out tho
clothes, and proceeded to wash them
carefully through two waters ; then
boil them in clean water, rathor brisk
ly, but not longer than half an hour.
Wash thorn out of the boil, rinse
through two waters. The last rinse
water should have a delicate tinge of
blue, likewise a small quantity of starch
for all cottons or linens ; reserve those
you wish stiffer for the last, and mix
more starch in the water. Shirt bosoms
and collars, skirts, in short anything
you wish very stif, should be dipped
while dry. Swiss, and other thin mus
lins and laces, are dipped in starch
while dry, and then clapped with the
hands until in a right condition to
iron.
Chlicoes, brilliants , and lawns of
white grounds, are washed. like any
other white material, omitting boiling
until the yellow tinge they acquire
makes it absolutely necessary. Un
bleached cottons and linens follow the
white clothes,through the same waters,
but must in no case be boiled with
them, as they continually discharge a
portion of their color and so discolor
the white clothes.
In directing the preparation for
washing fluids we give the process em
ployed with them; but colored clothes,
in our experience, can bo washed in
none of them, without injury to the
color.
Calicoes, colored lawns and
.colored
cottons, and linens generally are wash
ed through two suds and two rinsing
waters, starch being used in the last,
as all clothes look bettor and keep
clean longer, if a little stiffened.
