Recipes for the Ladies Iliac/.• Cake.—Four cups of flour, 1 cup butter, 1 of sugar, =l eggs,l tablespoonful of ginger, a little nutmeg, 1 teaspoonful salera tus dissolved in a cup of sour cream, beat all together and bake in a pound cake dish. Rice pitdding.—Take jr pint rice, boil it in water and stir it until it is quite dry, then add 1 quart fresh milk, one tablespoonful sugar, 1 teaspoon salt, 1 teaspoon cinnamon, 6 eggs well beat; drop in three pieces butter as large as a hickory nut when going to bake. White Spcmge Cake.-1 pound sugar, 3 lb. - flour, 1 tablespoonful rose water, take the whites of 15 eggs and beat them very light, then beat in the sugar and when it is light stir in the flour and bake in a moderate oven. Pound azl, - e.-1 pound sugar, 1 pound flour, 3 pound butter, 1 nutmeg—beat your butter to cream, 10 eggs beaten separately very light, you can add either rose water, a lemon, or brandy, you cannot beat it too much. Potato Cu6lard.-1 pint of smashed pota toes, li eggs, pound butter, 1 cup of cream, sugar, brandy and lemon to your taste. F'uit Cake.-1 pound flour, 1 pound but ter, 1 dozen eggs, 2 pounds raisins, 2 pounds currants, 3 pound of citron; take juice and rind of one lemon, 1 glass and a half of bran dy, take half of the flour and roll it well with the fruit, 1 tablespoonful of cinnamon, 1 nut meg, 1 pound sugar and a few cloves. Jumbtes.—Take 4 eggs, 3 cups sugar, a lit tle nutmeg, a teaspoon of saleratus, 1 cup of butter; stir in the flour until it will roll. Cut in rounds with a hole in the Centro; roll them C2ll sugar Cake.-1. cup butter, 1 pound pow dered sugar, 5 eggs, beat the sugar and but ter to a cream ; your eggs beat to a cream, 1 cup sour cream, 1 lemon, 4 cups of sour, 2 tablespoons of cream tartar, I of soda, bake them in a bun pan. Jracearoong.—The whites of G eggs, 1 lb. five pulverized sugar, pound almonds, bitter almonds. Cu'ltaye Purl , ling.—Beat to a cream oue cupful of good brown sugar and two large spoonfuls and a half of good butter, when well creamed stir in one well whipped egg, a little grated nutmeg and a large spoonful of orange water, sift into a pan one pint of flour and stir in two teaspoonfuls of cream of tar tar ; dissolve in a cup of milk a teaspoonful of best soda—beat this well together. But ter a baking pan and pour out the pudding, bake half an hour. Serve with wine sauce. This makes a delightful cake by adding two eggs—is better than pound cake when iced. Plumb Cake.—To I pound flour take 10 eggs, 1 pound sugar, 1 pound butter, 2 pound raisins, 2 pound currants, pound citron, 1 nutmeg, 1 cluzen cloves, 11 wine glass brandy. Loaf Cake.-5 pounds flour, S eggs, 2 lbs. of sugar, of a pound lard, and the same quantity of butter, 1 quart yeast, 1 quart of milk; roll the sugar in flour, add the raisins and spices. Rye Brood,—Make the batter the same as fur wheat ; manage the same way until you lvish to mix it; then you want a large iron spoon to stir it with. Stir as thick as possi ble, hare your bake tins well greased. and put it right on. When light, bake it. If yeast cake is used instead of yeast, take a small one dissolved in warm water. Potato Bread.—Peel 5 good potatoes, boil and mash them well in the water, so that you can run it all through a colander, or, if you wish much bread, you need more potatoes, as that would not be more than enough fur two good sized loaves. Manage the same way as with the - wheat bread sponge. In the morning:just add warm water enough to warm it some, and knead it up; let it rise twice, and you will have what I call beautiful bread. —Cur. Runt/ New Yorker. Common Butter Pat/di/yd.—Flour i pound, eggs -4, salt teaspoonful, milk 1 pint ; bake one hour and ten minutes. Blackberry Pualing.---Make a batter of 1 quart flour, 3 pints of milk and five eggs; stew - 3 pints of blackberries sweetened to your taste, and stir them in the batter; bake it, and eat it with any sweet sauce. To Color Pink•.--Take one pound of cloth and boil in alum water one hour ; pound three-fourths of an ounce of cochineal and rub it with one ounce of cream tartar; put in a brass kettle with water enough to cover the cloth ; when about blood heat, put in your cloth, stir constantly and boil about fifteen win u tes. Cookies.-1 teacup of butter, lof sugar, 1 egg and flour Tangle Brilche.---Take 3 eggs, a third of tiuful of shortening, a pint of buttermilk, warm the milk and shortening together, make the dough very stiff. Plain Btead Plalding.---Pour a quart of boiling milk over 4 ounces of bread crumbs, cover it till cold, and mix with 3 well beaten eggs, a tea cup of sugar, and half the peel of a grated lemon or a little pounded cinna mon, bake it in a buttered dish and serve with sweet sauce. Wheal, Bread.---Take, at night, 3 pints of new milk and stir in flour to make a stiff batter ; then add half a teacup of yeast ; cover over and let stand until morning ; then add .1 teaspoonful saleratus and more new milk, according to the quantity of bread you want to make, and knead it up.
