There Is no end to the directions for
making butter, which the agricultural
papers weekly print, and yet we think
that we may add our mite to the already
long list. There is &general comphtnt
with regard to the flavor and color of a
great part of the butter made during
April, but we experience no diMeulty
in 'making a No. 1 article which would
prove attractive to most palates. We
treat our milk in the Devonshire man
ner. Twenty-four hours after it is
strained into the pan, it is placed on a
' wire toaster over the stove, and heated
to a scalding point, then allowed to
stand twenty-four hours longer, when
It is skimmed, and we fully realize
what it is to say, "cream as thick as a
leather apron." Indeed we never saw
leather as thick as cream thus treated.
Our cow Is a three and a half years old
Alderney—has never had but one calf,
and has been farrow the pest year—
will calve again in June. She gives
but two quarts and a pint of ain't* day
—two quarts of milk - are -set—a quart
night and morning. We churn once a
- fortnight, and make from three and
tutee-quarters to four pounds at a
chornhig, ef mdst delicious butter.—
This is making a pOund of butter from
seven quarts of milk. It is usually
supposed that it takes twelve quarts of
milk to produce a pound of butter—
and this yield proves the superiority of
the ,Alderney breed for butter purposes
at lead. -
Oftentimes the housewife ceases to
make butter because she collects so
small a quantity of cream, and cannot
keep It free from a cheesy smelt This'
is easily avoided by putting dpe tea
' spoonful of saltpetre into the cream jar
when the Scat Dream is skimmed—then
when additions lire made, stir up the
whole male with the skimmer or a
spoon, taki* care not to let it drop
and run doetn the sides of the jar.—
Cream treaded in this manner will keep
perfectly Wall for a fortnight at least,
and churns• sweetly flavored otter as
though it were but a week old.
We use carrots as a coloring matter at
this season, knowing that-they impart
a bright color t to the butter, and do not
injure Its Savor in the least. For four
pounds.* buher grate the outside rind
of two good sized carrots; boil them in
a half pint of milk ; strain through a
cloth into the cream after It is in, the
churn: This briny the cream to the
right temperature for churning, gives
the butter an admirable color and biter
better than the annatto which famous
Philadelphia butter makers use all the
year round.. The yolks of egp color
butter wall, but are rather costly. ;
It is amusing to practlealbuttermak
era to read what men write concerning
butler-making. They say—"butter
which comes after an hour or two of
rapid churning, is of a better quality
than when it is made in ten minutes."

which contains the butter only break
at such a temperatuie—that produced,

as in two hours, why is not the quan
tity and quality as good
We know by long experience that it
is. All this season our butterhasmade
its appearance in from five to ten min
utes after it has been put into the churn,
with one single exception ; that time
the cream was too sweet, so the churn
acted like a whip•churn, and the cream
frothed and boiled - like a mad creature.
We churned an hour ? , then added one
tablespoonful of poirdered slum to
four quarts of cream. AS if by magic
the cream fell to its Original quantity,
and in four minutes thewelcome splash;
splash, announced that the butter had
• "come." At . 60 degrees Fahrenheit;

burst, and the butter is formed. A lit
tle higher temperature will produce
the same effect, but then ft is too soft
to manage advantageously. The night
before butter is made the cream pot is
placed upon the reservoir for hot water
on the stove. - In the morning, If the
weather is cold, the pot is placed in a
pan of boiling water. The heat of the I
cream is tested by dipping one finger
into the cream ; if Ito sensation of chill
is felt, the cream is rightly heated; the
churn is scalded ; the cream poured in
while smoking hot ; the scalded car
roty milk turned in ; then in leas than
tensninutea the butter is made. The
crank Is then reversed—the buttermilk
in a degree worked out—the butter
betel sadded—the paddies also—and
the butter is taken ouy' -worked with
piddim and halide, s tamped into aheibi,
rolls and tiny with the prettily
ribbed butter paddle so much used at`
p*ent, and which Produces such prat•
tyi effects that all housekeepers should
otrn them. A butter dish tilled with
these products, and garnished with
swirl of parsley, is a "thlug of beau
