HOW SMALL WE KEEP 01711 FOWLS?
This is a question which oonoerns
thousands at this season., A supply of
fresh eggs Is a great addition to our
kitchen economy, and a most agreeable
one to our table. Fresh eggs for break- '
fast all the year round is decidedly Mo.
plan. In the first place we must pro
vide light and air. Windows are ab
solutely necessary on the south side of
the henroost, so that the winter's sun
can be made available for warmth. All
the scraps of soap grease of the kitchen
can be returned to us in the shape of
fresh eggs, and will greatly lessen the ,
expense of feeding , the hens. They
must have animal food. When the
ground is open and worms abundant,
they are as well supplied_ as though'
they dined on roast beef and mutton ;
but in the winter It must be given to
them. All the bones left from the
table, the bits of fat, the scrapings, of
the plates, etc., should be treasured for
their use. Keep an old kettle .on the
back of. the stove, turn all the slops
into it, even coffee-grounds, and when
well heated, feed It. At noontime it
can be given smoking hot and quite
watery—the warm drink helps to sup
ply the carbon'. they' pied.' ;Where
beef's liver can be cheaply obtained It
makes exiiellent food ; chop it fine and
they will eat It greedily. Keep a box
filled with gravel, old plaster, sleeked
lime or oyster shells--even hard coal
ashes will not come amiss—for hens
must have food needful to form egg
shells, elselthey will drop , them shell
leas.
For grain—we think a mixture is the
most profitable. Sweeping* from the
'-..krist mill do Very well—oats, corn and
rykround together - coarsely make - a
good feed. Hens desire variety—will
• not lay eggs , on on kind of nourish
ment.
When oil cake" and scrape-cake can
be purchased, they are the most deSir
able food. They come in solid muss
and are not wasted. Bone is excellent
to go with the scraps. To this diet add
coarse corn hominy, and• you will nev
er. complain that hens are not worth
their feed.
Cleanliness is all important—the hen
houseshould be whitewaished with hot
lime, spring and fall, andthe poles on
which they roost should be covered
with kerosene oil syery month or two.
These preCautions are necessary to de
stroy the insects which will } breed In
.
such places. Pure warm water in iron
basins, should be given every morning
but not allowed to freeze.. If the
chickens are sick give them soap pills
made of yelloir bar soap ; this acts like
a cathartic. If chilled,- give
_pepper
corns—two of them if the chickens are
large—or hot aillitand pepper can be
turned down the neck with a teaspoon.
A hen increases in the amount of
eggs she lays until four years old ; then
she is only fit for chicken broth.
We would not enter into adisonssion
upon the merits of different breeds, nor
riu id we pay. twelve dollars a pair for
novelties." The.white Leghorn* are
our favorites ; their ewers large, their
chickens4row rapidly, and their flesh
Is tender and of a delicious flavor.
The Brahniah Pootras or Brahmah
Prims, as a good'-farmer in our neigh
borhood will call theni, are good sized
fowls and produce fine (toffee colored
eggs, but we confess to agrekter delight
in the purely white eggs, and think
that what the chicken wane, in size It
looses in delicacy of flavor. They have
mixed with our Leghorna and. 'formed
a mongrel breed which seems to prom
ise well. We have forty-five chickens
ready for drippingr? . or pie, which
have sprung irons d rent bros.% and
are of good eke. It is more profitable
to keep a dozen hens than onepig—the
outlay Is much less, the income much
greater ;-and the pleasure you take in
the former is ineztuipstible, !, What
pride we take 4n sending' a dozen fresh
eggs to our kind neighbors in the depth
or winter. What a relish they give to
every meal. Try it friend, and see how
cheaply pleasure can be purchaeed.—
