In further discussing this subject he
says, it should be borne in mind, that the
manufacturing of meat, as it were, and of
milk, are continuously going on in the
healthy cow, so that it does not require
much force to turn the balance either
way, especially when there is a tendency
to the secretion of Tat; in such - cases le
must be adverse to the secretion of milk.
Hence, with healthful cows, with pro
per and high feed, three milkings a day
are better than two, provided milk is de
in its largest quantity.
The present system of milking .brit
twice a day took its rise when cows were
leas highly fed than now, and gave much
lees milk per day; hence, inapplicability
to deep milkers of thepresent day. Four
times a day is 'better even than three,
when cows are kept on luxuriant feed,
as intimatedabeve, when milking should
correspond with "the periods of healthy
rumination, digestion, secretion of milk,
and rest." W hat objection can be raised
with regard to dairies kept for their milk,
called in England, 'Commercial
to milking three, or even four times a
day, when cowsare kept and fed especial
ly for their milk, whether for the supply
of the milk market, oir for making butter
and cheese, either or both ?—the cow in
such cases being regarded as a milk-ma
king machine, whose use- is to convert
forage into good milk.
HATCHING FISHING EGGS.—The ex
periments4u s . l . sh breeding are bringing
to light some very interesting facts in
their natural history. It takes much
longer to hatch the eggs of the varieties
that breed In cold water than those that
are spawned in 'rivers during the sum
mer. The eggs of shad, put in water of
suitable temperature, produce young fish
in A few days. The salmon trout eggs
require alonger incubation than those of
most birds.- Salunnirequire two months
or more, under the most favorable
eumstances. The- New England Fish
C ommissioners, we'See by the papers, are
having great luck I,n the hatching line,
at the Charleston Springs in New am,-
shire, where they deposited 40,000 sal
mon egg. in Odloiltrs I Thor pafified
on the 11th of December, plat ''62 flays
from the time they were taken from the.
parent fish. The eggs of the salmon
trout, at' hese springs, were 35 days in
hatching, which is said to be the short
est time on record in this country.—
The annual catch of shod in the Con
necticut has dwindled to about 600,000.
If 50,000,000,000 *were turned into the
rivers, as reported, shad ought to be very
plenty and cheap next spring: For the
salmon we shall have to longer.—
They are two years or more comlng to
maturity, and it is proposed, we believe,
by - the Fish Commissioners, not to allow,
any to be taken from the Connecticut
except for the purpose of propagation,
until 1871.
In England, the work of re-stocking
the rivers with salmon is going on suc
cessfully, and We frequent discussion
in our exchanges on topics connected
with this subject. The best method of
constructing fish stairs is still under dis
cussion. Nothing better has been elicit
ed that( the plan illustrated in our last
volume. It Is well settled that the in
clination In these stairs should not be
greater.than one foot in seven, These re
stocked rivers are affecting the price , of
fish, and salmon can •be had in the Lon
don market for .less , than half what It
costs in our cities. • - Itiprarian Owners
