    FARM NOTES,
ADULTERATED MiLK,—The pres-
ence of water in milk was once thought
to be easily detected by the lactome-
ter. This instrument showed the
specific gravity of the mixture,
was found that cream and
80 nearly of the same specific gravity,
that milk could be skimmed of part of
its cream,
quantity of water, be brought to the
specific gravity of full milk, There
are in use some simple
analyzing milk to detect the presence
of added water, coloring matter,
but the general tendency now is to
tain certain percentages of solids,
made up of fats, caseine and sugar,
ranging in
half to thirteen per cent. The former
is the English, and the latter the Bos-
ton standard, It has been found that
milk can be adulterated in
quite as easily ds in the can,

der former laws, if it could be proved
that the milk bad been tampered with
since leaving the cow, it was mer-
