SYS MOUS FOK BREAD.
Mr. William Ray :twee, writing in the
London Morning Stor,nstireets attention
to the use of rye bread on the score of
(+enemies. The writer adverts to the fact
that "bread made' from rye is eaten by,
all ranks of society in the - northeast of
Europe, and Is scarcely ever absent from
the tables of the noble and wealthy, be.
cause two sorts of bread are considered
more wholesome and nourishing than
the exclusive use of one." Of the two
kinds of bread, the rye and the finest
wheaten, made at the Vienna bakery of
the Paris Exhibition, and served at the
adjoining lager-beer drinking hall, the
._rye bread was largely taken In preference.
The cue of a German Is cited, who In his
own country used to eat a slice of wheat
en bread and a Mice of rye bread togeth
er, and who, on coming to reside in Eng
land, suffered much In health from the
entire meter wheaten bread.
To be somewhat more specific than
Mr. Smee in relation to the use of rye
bread by the people of the northeast of
Europe, we would add, that rye Is the
chief staple fur farinaceous food of Swe
den, Northern Russia and the southern
part of Norway, also Germany and the
larger part of France. It is, indeed, said
to nourish a more numerous population
than wheat itself. In France and Ger
many it Is usual to eat the bread of the
flour of the two grains mixed In nearly
equal propertions, and called manic
Ryir flour contains some gluten or nitro
gehoue element, and also starch and su
gar. The prdportion of the former in
rye to-that in wheat has been estimated
as five to nineteen. Rye may be kept
for i length of time without losing its
flavor or being otherwise changtd ; and
hence the country people in Frincepnly
bake every eight or ten days. ! The
Swedish peasantry carry their economy
of labor and fuel still further, in baking
their rye cakes only twice In the year:
TomsToEs.—Tomato plants may now
be transplanted from the hot-bed al any
Lime. They should be set firmly In the
soil, which should be weibmanured ;
and for the first week or two, should the
weather be warm, be protected against
the sun during four hours of the day.
If the nights be cool or frost threatened
they should tie covered In some way—
old newspapers, with stones or clods at
the corners, are as good as. anything—
for the first two weeks. Mulching with
grass and frequent stirring of the soil
have an assuring effect lu producing an
abundant crop.
Some people allow the ,vines to run
over the ground entirely, turd we admit
- that they will produce as greatly this
way as perhaps any other, but, coining
In contact with the soil, their flavor is
destroyed and they become insipid and
worthless. Our mode Is , to "bush"
them as we do peas, only more extensive
ly, and Wh have the best of (Tolls. The
expense of trellises and frame-work,
which amateur gardeners Indulge in, Is
just so much money thrown away. •
PLANTIMa LIMA BEANS.—IC is not
generally known, or it known practiced
by few, that Lima beans, so liable to rot
after planting In a wet spelitean be pro
tected ageinet this danger by simply
greasing them well before planting. It
should be done thoroughly, and unless
the season be extremely wet' It will
prove a sum 'remedy. A few years ago,
while a neighbor had to plant his bed a
third time ours was wholly uninjured.
This is a hint worth acting upon. It
may Insure many a crop of early Limit,
which everybody admits is the "bean of
beans." - -
PRUNING ROSES.—The past winter
was very hard upon the rose bushes, es
pecially where they were lightly straw
ed-up. In pruning them It should be
done with a liberal hand. There need
be no tear of injury. Nothing stands
pruning better than the rose, and we
think• it. Is a benefit to it to be killed
down to. the . ground every two or three
years! Therefore,..whenaver any con
siderable dead pailion of the wood ap
pdars, cut nearly or quite down to the
ground and It will give vigor to the•root
and new shoots, and the flowers will be
much finer.
Loox TO YOUR CELLARS.—NOW ,is the
time; to clean up the cellars, as it is a
Work that should not be left until Warm
weather Is 'upon ua. By that time any
vegetable matter left remaining will de
compose and produce an atmosphere
most deleterious to health. The meat
stands should be emptied upon the as
paragus beds or manure heap, and must
not be thrown anywhere else, as the
brine will kill even trees as thick as an
arm if applied In large quantities. The
cellar should then be thoroughly white
washed, and burnished rap Wee enough
to dine In. A•Althy cellar is an abom
ination that no housekeeper wbo has
any claim to tldiaess - will allow to
remain au hoar longer than can be
helped. Tka health of the entire family
may be seriously endangered by it, and
we have no doubt that in many Instan
ces fevers have resulted from unwarran
table neglect in this matter.
