NATIONAL AONICELITRAL REPORT.
The October report of the agricultural
dapartment, Just out, imp; of the wheat

It will surmount the figures of last
year by forty or fifty millions, but will
not reach the amount which should have
beep attained upon the rates of increase
made between 1850 and 1860 by 20,000,40 U
bushels.
As an approximate upon present data
220,0014000 to 135,000,000 bushels may be
received as the crop of the entire coun
try for 1887.
In the Atlantic States tte greatest de
ficiency last year was inTennsylvania,
and the Increase there thiit year is 57 per
cent. The Southern States show a mater
ial enlargement in the a?eu of wheat.

more nearly self-supporting and Indepen
dent than formerly. This is particular
ly notieealile in Virginia, Georgia, Ala
hams, Tennessee and Arkansas.
The quality'of the wheat crop is repor
ted to greatly superior to that of last
yea . r. It is almost, universally sound
and dry, but in many localities there may
be found from one-third to one-half de
ficient in weight, 'asking in plumpness
or slightly shrlvkled, and passing as
No. 2, being less than 5 , 13 pounds to the
bushel. _

cleanliness and ce in preparing the
grain for the mar . t. High prices and
the marked disc nninations of buy
ers are doing good evvice in this direc
tion.

The quality of the corn rep is uniform

The sorgloou'interest has greatly de
clined, and frosts have injured the crop
in many places.
The. buckwheat cfop Will scarcely be
equal tothat of last Tear.
The potato crop is a poor one t I)l4'year
A decline in the tobacco product is in-:
dicated in the principal tobacco-growing
sections.
Louisiana, the oily -,tote producing
cane sugar to uny extent, reports an in
crease of 20 per cent. over the small yield
or last year. •
CoMplete estimates of cotton will be
made on the receipt of the November
returns. The returns of October indicate
a conlidemble Indeasi in youth Carolina,
Georgia and Alabama, and about the
same yield us last year in Mississippi, Ar
kansas and Tennessee, and a marked
climlnution In Texas and Louisiana. All
estimates below 2,000,000 bales are deeid
edly fallacious, wh ile the present indica
tions favor on approximate to 2,500,000
bales.
There appears tole a smnll deficency
of fattening cattle in Kentucky, Ohio,
Indiana and Illinois, the center of mug,
tern supplies. Further . West and North•
west the supply is generally quite as
good as last year.
Ho* To Cool: A Hem.—We dine oc
casionally at the table of Mrs K., and
'Until 'we tasted it there`, we did not know
what a ham was capable of. It being
too ales to remain a family secret, we
asked for the recipe fur the benefit

remove the skim-and trial it nicely, and
then rub into the fat a pound of powder
ed sugar, or as much AS it will take up.
The ham Is them placed in a dripping
pan, In which is put a pint of sherry, or
other-good wine, and put Into ai'e oven,
and baked very slowly for two hours.
During the baking at is frequently blotted
wittf wine. 'I ry this, and we are confi
dent You will say that you have never
before eaten ham in its greatest perfec

OORN MEAL PUDDIAO WITHOUT EOPB.
—Take seven heaping table-spoonful of
meal, a salt-spoonful of salt, two table
spoonsful'of butter, one tea-cupful tit mo
lasses, a table-voonfal of ginger, an - 1
mix with a quart of boiling' milk i r
When thoroughly mixed, pour into it
buttered pan, and just as yolu set in th
oven stir in a cup of cold water; whica
will have the same effect as eggs. Bak&
one hour.
GINGERBREAD LOAF—Two pounds of
flour, two pounds of molasses, half a
pound of coarse brown sugar, one ounce
and a-half of ground ginger, one ounce
of carraway seed, six ounces of butter,
eight eggs, and a small table-gpoonful of
soda; melt the Linter, molasses, and
sugar together Ortir the tire, and mix
with the other ingredients. Bake three
hours.
DYSPEPSIA BREAD.—The following re
cipe for making bread has proved highly
salutary to persows afflicted with dyspep
sia: Three quarts of unbolted wheat
,meal, one quart of soft water, warm but
not hot, one gill of fresh yeast, one , gill
of molasses, or not, as may stit the taste,
and one teaspoonful of saleratus.
A NICE TEA CAKE.—One Cupful of mu
,gar, one of sweet milk, one egg, one tea-
Spoonful of soda dissolved in the milk,
twattaspoonsful of cream 7 tartar, put into
one Out of flour sifted, a cupful of well
cleaned_cUirants, and half a nutmeg or
a spoonful of carraway seed.
CHEAP CARE.—Take three tablespoons
fal,of melted lard, butter, or fried meat
gravy, one teacupful of sugar, nue of
sour. or sweet milk, (some prefer the
sour,) half a teaspoonful of saleratus;
put flour enough In to make it as stiff as
you can, stir
