correct or not, we are not able, to judge,
and leave the question to our Adams
county farming oommunity, than which

Very deep plowing Is thought to be, not
only unnecessary, but absolutely inju
rious. The young plant seems to need a

advantage withstands the "throwing
out" produced by alternate thawing.

acting upon the mineral elements of the

moisture in the soil. We seldom have a
'rain so great as to produce an unhealthy
stagnailon of water abbut the roots of
plants set In a soil seven or eight Inches
deep, and, on the contrary, we seldom
have a drought of so long continuance as
to extract all the moisture to that depth.
These' and other known advantages
fiom deep ploughing, we might dwell
upon ; and, apart from the well known
!het above alluded to, it would hardly be
supposed that any crop, of whatever
character, would be exempted frlom the
good influences of the practice.
We mast make a proper distinction,
however, between a natural subeoll, in
durated and rendered Impervions to the
actiontlof the air by centuries of rest--ita
original hardness and impenetrability
_aggravated by a long course of continu
ous treading, in ploughing the surface
soil—and that firm, mellow body of
earth, Which is produced by deep culti
vation.
It hdlg firm, yet generous subsoil,
which forms so valuable a matrix for the
roots of the wheat plant, and enables them
to reshot the looserlng effects of alter
nate frosteand thaws during winter. This
important distinction, it will be observed,
allows nothing to be detracted from the
argument in favor of deep ploughing.
- It is only when the previous working
- has been, Indeed, most thorough, that
the wheat reaps a due advantage from
the shallow ploughing. The undetstra
turn, though somewhat compacted In
Comparison With the loose surface soil,
Is so enlivened hy the former breaking
up, that the tender rootlets take firm
bold and keep their pieces.
The advantage eh this comparative
-firmness of the substratum Is apparent
in the practice, now so common, of sees•
ing torn land to wheat, without any
ploughing beyond what has been given to
the corn. The action of the tines of the
wheat drill, or any such scratching of
the surface as will give the seeds a slight
covering, Is found to answer all neces
sary purposes- even on tolerably tena
cious clays. It is insisted, ihdeed, alter
'much experience, that this Is the mart
succumb.' practice for corn land seeding.
, WINE Makixo.—An experienced wine
maker gives the following directions for
making wine•: ;
Pick the grapes off the stem when ful
ly Ape, rejecting bad ones. Pass them
through one of the Wine Mills to tear
open the skins, but not to bruise the pulp.
Press moderately ; then get all that re-
Maine in order to make brandy or an
inferior wine of. Strain and fill into
clean barrels; then insert a bent tube
tight la the bung, and let the lower (out
side) end rest under the surface of water
in a bucket, so that all the gas shall es•
cape; the Mr will not get to the wine.
When 1$ bas done fermenting, rack It
off into clean barrels, bung It up, and sef
in a cool place ; bottle it in a few months.
The great secret of Mating good wine
is to select only the best grapes, and
not press out the sour portion of tke pulp.
Gittgams CORN.-A writer in the Ger
toantOwn 7clcgraph says that green corn
may be kept the year round by pickling
it with the husk on, in brine strong
enough-to-preserve cucumbers, care be
ing taken to keep 1t covered with brine.
Boiling it is a good supply , of water
will freshen it sufficiently for the table.
It is Worth trying.
Berm HAX.—Moet persons ball ham.
They are much better baked, if baked
right; Soak for an hour in clean water,
and wipe dry,: and then spread it all over
with thin flout batter, and lay in a deep
dish with stick. under to keep it out of
the-graty. When fully done take off
the akin and the batter crusted upon the
fled aide, and set away to cool. Yon
will find It very delicious, but rich for
dyspeptics, says one of our agricultural
esolninges.
