the stove, or milk has boiled over and a
suffocating smoke escapes, sprinkle the

Southern pudding : Three eggs bea
ten separately, two cups of white sugar,
one cup of sweet cream, one cup of but
ter, two or three tablespoon fuls of flour.
Flavor with lemon and bake in crust.

Mixture of rain water, cologne and
glycerine should be kept by those who

Apply to the face and hands after wash
ing. Bean water ia also good for rough
skin. Put a handfnl in a bag and dip
it in warm water and wash in it.
Mock mince pie : K'.ne small butter
crackers, two cups of cider or one cup
of vinegar and one of water ; half a
pint of molasses, one cup of sugar ; a
piece of butter the size or a walnut, one
cun of chopped raisins and spice to
taste. Mix all the ingredients together
and set them on tne fire until they be
come hot. When quite cold fill the
pastry lined pans, cover with a top
crust and bake.
Crisped pork : Soak slices of salt
pork in sour milk and water twelve
hours, or over night. In the morning
wash in clear water, fry until half cook
ed, pour oil all tne fat, place pork
aga'n in frying-pan, with three chopped
onions, a little pepper and a pinch of
sage, fry until well cooked, then take
from th frjlng-pan, add to what fat is
in the pan, one teacup cold water, in
which yon have stirred one-half table
spoon of flour, let boil and serve in a
bowl with the salt pork and baked po
tatoes. Stuffed eggs: Work four ounces of
boiled or potted ham to a smooth paste ;
add a pinch of cayenne and a teaspoon
ful of anchovy paste. Hard-boil six
eggs, when cold remove the shells ; cut
a thin slice off the large end of each ;

The Care of Horses
The fact that the horse has no power
to store bile indicates the great rapidity
of his digestion and the power of assim
llation. For such reasons he should be
fed as frequently as possible, and I con
aider, if a rule can be applied, that a
Tiorse shonld be allowed not more than
2 per cent, of his weight a day in food
that is a horse weighing 1,000 pounds
should have twenty pounds of food a
day, half of which, when at hard work,
may be grain. This is an abundant al
lowance, and in idle time should be re
duced at least one-fourth. He should
have what salt he requires, himself to
