The ait of baking consists in heating
anything in an oven or fire so as to
harden it, and this term is applied to
the manufacture of bread ami porce
lain, and like most arts of primary
importance, precedes the period of his
tory, beinc involved in the obscurity

great antiquity of the art of baking.

was put under strict regulation and
f ujervision, and continued to ctl'ect
the trade until very recent times.
In England as early as 1266 an act
was passed regulating the price of
bread by public assize, and coniinued
until ls:"r. In 1812 the captain of on
English ship ordered a baker in one of
the towns of Sweden to bake a quanti
ty of bread to the value of 1 sterling.
The baker, confounded at so lirgc nn
order, refused to comply unless secu
rity was furnished that he would take
the bread away, as so l irge a quantity
could never be disposed of in the town.
In the year 1804 Manchester, England
with a population of 90,000 persons,
did not contain a single public baker.
(Just imagine a city in the United
St.tes without a baker.) In 1803, in
Great Britain, an act was paseed mak
ing a searching inquiry into the con
dition of bake houses and of the per
sons employed in them. History docs
not 3'et give much information regard
ing bakers in our own country ; but
possessing, ns we do, in this age, all
the inventions ami appliances tor mak
ing bread, there is no use in pursuing
the subject furthei at this time. lite

A Sagacious Cat. One very strange
thing I rememlcr happening at the
house where I was visiting. I had
been told of it, but never fully realized
how peculiar it was till I witnessed it
myself. The family consisted of my
friend, her husband, and four children;
and when news was brought that puss
had five new kittens, each begged so
hard to be allowed to have one that
orders were given to save four and
drown the remaining one. Whether
Mrs. Puss missed her child or not I
don't know, but .she seemed very well
satisfied with those left her, ami was
more than usually happy when any of
the children would pay her a visit at
her snug quarters under the kitchen
table. A dozen times a day or more
would the luckless kittens be dragged
from their lied to be kissed and hug
ged. Hut it so happened that from
some cause or other one whole day
Kissed without any one going to see
the kittens, much to their mother's
grief, who had frequently gone to the
nursery in search of her voting friends.
Evening came; the whole family were
together, the two younger ones, being
on the floor, when, to their astonisi
ment, in wdked the cat, carrying a
kitten in her mouth. This she carried
to one of the children, and so soon as
she saw it was kindly received ran
quickly away. Dump, bump, was soon
heard, ami in came the mother cat with
another kitten; which was deposited
near another of the children. Curios
ity was now excited, the two elder
children took seats on the floor, to see I
if kittens would be brought to them,
and in a very short time they were.
