Sufrar Cookies. Two cupfuls 01
sugar, two egpa, one-half cupful of but
ter, one-half oupful of fried meat frravj
or dripping's, one-half cupful of sweo!
cream, one-half teaspoonful of stxla.
Hcfore baking, dip the top of each
cooky In the white of efrp;, then in
granulated sugar. The white of the
egg is not to be beaten. Housekeeper.
Canned Rhubarb. There Is noth
lng which keeps no easily in cans at
rhubarb. Fill perfect cans with th
nllcod stalks, crowding them dowr
firmly. Put the cans in a cool place
and fill with cool water, and leave ovci
night. Examine the cans the next da,
and see that they are full to the brim
1 then screw on the tops and treat like
canned fruit. I have used it when twe
years old which was as nice as the fresh
vegetable. Rural.
Stewed Sweetbreads. Parboil and
carefully remove the skin without
breaking the sweetbreads, put them
into a stew pan with two ounces of but
ter, a tablespoon ful of chopped pars
ley, one clove, one bay leaf, a teaspoon
ful of Worcestershire sauce, a half tea
spoonful of salt and a half pint ol
white stock. Set the pan over a mod
erate fire and simmer for thirty min
utes. Dish the sweetbreads. Wash a
pint of French peas in cold water, add
thetn to the sauce, let the whole come
to a boil, skim all the fat from the sur
face, and pour tho sauce and pens
around the sweetbreads. N. Y. Ob
erver. Hoof Olives. Cut one and one-hall
pounds of beef in strips three inchei
wide and four long. Add to the chopped
trimmings and fat, salt, pepper, three
tublespoonfuls of cracker powder, one
toaspoonful each of sago and savory.
Spread on strips, roll up and tie with
twine. Roll them in flour. Fry quar
ter pound till brown, remove it and put
olives of beef in the fat. Fry brown,
then put in a covered pan. To at add
one tablespoonful of flour and rub
smooth. Add one and one-half pints oi
'boiling water. Reason to taste, pour
over olives and simmer two hours. Cut
strings, and pour gravy over dish ol
olives. Good Housekeeping.
Graham Shortcake. One and one
half teacupfuls sweet cream, two tea
cupfuls graham flour, two large tea
spoonfuls baking powder and one-half
toaspoonful salt. Mix lightly together
and roll out two round cakes, one-hall
an inch thick. Lay one on a buttered
tin, brush over the top with melted
butter and lay the other cake on it
Bake in a quick oven. When done re
move the upper layer, spread with but
ter and then with a layer of sweetened ;
rhubarb, strawberries, or any kind of i
sweetmeats one has at hand, on both
the layers. Eat warm, preferably with j
cream and sugar, though it la nice
without Orange Judd Farmer.
Orange Ice Cream. To make an
orange iee cream grate the peel of
three Valencia oranges Into a pint of
boiling milk. Be careful to use only
the yellow peel, none of the bitter
white peel that lies underneath. Add
the juice of the oranges, mixed with a
cup of sugar and the yolks of six eggs.
Stir the boiling milk gradually into
the eggs. It must not curdle. Add a
.pint of perfectly fresh cream, and if
the mlxtnre is not a good yellow a drop
or two of the yellow French coloring
quid used by confectioners and cater
ers. These vegetable colorings are per
fectly safe, and often add considerably
to the appearance of the dish. Frees
the iee cream as usual, and disli it out
in little round forms, about the else of
small oranges. Boston Budget

Accounts come from Germany that
(Crupp, the famous gun maker, is now
building a number of experimental en
gines to test a novel idea. According
to Hardware, a German inventor has
taken patents on the utilization of the
general principle that finely divided
carbonaceous matter floating in the air
readily explodes. He proposes to grind
coal to an impalpable powder, and
after introducing the dust floating in
the air into the cylinder of an engine,
explode it, the idea being to follow
very much the same lines which are
being so thoroughly developed in the
use of gas in engine practice. Natur
ally, the first question which has risen
has been how to get rid of the ash.
Krupp is reported to have stated that
his experience in gun manufacture con
vinces him that this is not a serious
obstacle. The advantages which would
grow out of a direct utilization of min
eral fuel as mined are very obvious.
While modern practice convert. only
10 to 15 per cent, of the heat energy
stored in coal into power at the crank
shaft of a steam engine, it is believed
that no less than 75 to 80 per cent
could be made available by the direct
combustion of fuel through explosion
of coal dust Mechanical News.
An Alligator's NesU
illtgator's nests resemble haycocka
more than anything else to which they
oan be compared. They average about
four feet in height and about five feet
in diameter, and are constructed of
grasses and herbage. First the mother
'gator deposits one layer of eggs on a
mortar-like floor, and having covered
this with a stratum of mud and herb
age about eight inches thick, lays an
other set of eggs upon that, and bo on
to the top, there being eommo.ily from
100 to 300 eggs in a nest With their
tails the parents then beat down the
tall grass and weeds, to prevent the
approach of unseen enemies. The
female watches her eggs until they
sru hatehed by tho heat of the sun,
nd then takes her brood under her
wn cstre, defending them and provid
ing for their subsistence. Dr. Lutzen
burg, of New Orleans, once packed one
of these nests for shipment to St.
Petersburg, but tho young hatched
out before they were started on the
long voyage, and were kept about the
doctor's premises, running all over the
house, up and down stairs, whlnlngllke
