le with Bait and pepper : tako a quart of
milk, quarter pound of flour, n bunch of
parsley nud three large slices of onion ; put
over tbo tire and stir till it comes to a thick
cream ; take oil, add two epjj'i quarter
piyind of butter; stiaiu through a sieve
put in a baking dish a layer of fiih noil a
layer ol sauco alternately until the disb is
full, the sauce being on top, then sprinkle
with braid crumbs j bake half an hour in a
moderate oven.
Uaked Cod or. Haddock. Take a rod
or haddock of fire or six pounds ; keep the
beau un the ush ; un not havo it upmicd loo
deep ; make a farcie or ttuliinj; of bait
pound of bread crumb, a tcapoonful of
very fine divided parsley, a teaspoonful ol
salt, asaltspoouful of grouud pepper.a l.all
teaspooiiful of dried, mixeil thyme and mar
joram ; take two eggs, beat them all togeth
er, add a teaspoonful of butter, mix all
thoroughly and fill In tbo fish with it; if iiec-
essary tie the fish up with a string; bake
slowly in a pan, larding with a little butter
from time to time; about an hour and i
half will cook the fish.

QrjENEbi.Ea or Fish. Takebreo pounds
of white-fish or pickerel, and boil, cooking
a trills less than for serving as boiled fish
Divide th fish, picking out bones ; rub the
fish through a sieve ; pound the fish in
mortar with quarter of a pound of butter, an
equal quantity of bread crumbs ; add a half
leaspoonful of pepper, and one-third of
grated nutmeg, take three eggs, beat all
well together, and mix with the fish ; add
spoonful of cream and the juico of a lemon
spread flour on a board, and roll out the
material, adding sufficient flour to thicken
it ; when smooth, divide the paste into
pieces about 2J inches long by 2 inches
wide ; roll these iuto cigar-like shapes, but
not too pointed ; fry in very hot butler un
til a light brown. This dish makes a hand
some entree, and may be u-ed with a centre
of mushrooms or trulllcs.

dius, a wild mountainous region, containing

A GARMENT OF GLASS
Tho S en Francisco Chronicle says : 'In

being woven the most wonderful fabric of
which tho voluminous history of tiulque
feminine- apparel furnished any account. It
is the material, as flexible as tho finest silk
and as durable as llluu Jean Williams' f.i-

Professor Theoihre Qrenier, outof inrium-
erablo colored strands of glass first spun by
himself. Compared with tho completed gar
ment, tho mythical glass slipper of the fabu
lous Cinderelln wilt sink into vulgar insig
nificance. The spinning Is all done, and oc
cupied many weeks, and is of very fine
finish. The weaving is all done on an old-
fasliioned hand loom, the warp being nine
teen feet long and the wool four feet, so that
tbo material will cut to splendid advantage,
Only about ten inches a day can be woven,
It is of that now extremely fashionable loose
and careless ml mixture of colors known as
the Oriental. When tho dress is finished,
it is to be worn by a young wax lady with n
glass head, blown expressly for the occasion
by the. professor, aud profusely ornamented
with blonde glass curls. The dres is to be
made with punier skirt, loop sleeve and
quare neck. It is to bo beautified with box
pleating, nud bound in blue. W ueu the
dre-s and the wearer are fully construcled
they will be put on exhibition. At the cor
onation of Queen Victoria she wnreadrrss
the wool of which wasspuu glass, but the
warp ofsilk. This was then thought to be
the greatest feat which could ever bo accoin
plished in the glass business.'
It is often said that the medical profession
n the United States is overcrowded. Over
eighty medical colleges send forth every
year more than one thousand new graduates
to bo supported by suffering humanity. The
number of doctors is increasing far beyond
tho iucrea"o of population, In 1810 there
were in the whole country COO medical slu
dents, or one to 12.000 people; whereas, in
1S77, there were 'J.G10 students, or one to
00 inhabitants. No couutry has such tn
abuudance of doctors, for iu no country can
the medical diploma or license be obtained
so easily as in our republic. As a renlt ol
this we have one doctor to every GOO peopli ;
whereas our neighbor, Canada, has ono doc
tor to 1,200 people; Great Ilritain, one to
,072; trance, one to 1,811; Iielgium. one to
2,048; Austria, one to 2,500; Germany, one
to 3,000; Italy, one to 3,500; Norway, one
to 3,480; Kussia, one to 50,000. The physi
cians of this country, under the double pres
sure of hard times and professional compe
tition, have begun to think that the time lias
come to adopt measures of protection. One
proposition, which w ill not be adopted, is to
abolish colleges as piivule i-oipotatinu, and
put medical education under the control of
the States ; that is, to establish State colleges
with salaried professors, w bo shall not de
pend upon the students for their income,
and so will not be tempted to praut diplomas
to the largest possible number of graduates.
In the north of Holland tho fares aro not
over a foot abive the level of the sea, and
soui aro lower. The land is loose, spongy
muck, and is very rich. It is subdivided
Into hmall parcels by canals. There lire

pump water all the time. The dwellings
are as neat as they iossibly can be. Tho
are built lu small villages, clustered closely
together. The roads are all paved, and not
a particle of dust is ever seen. They una

hours by boat, or two hours by rail. Tiie
houses are built as nicely as any in our ci
ties, about fifty feet square, with about eight
feet between tbe joists upon tho first floor ;

are models of neatness. The Hours are all
pavod with stone or brick. In these slables

The bedding is always clean, and lasts a
good while When the cattle aro put Into

and tied with a rope to the corner of the
stall. The air there is always cie illy, atul
the cows ure blanketed in tummer, aud of
couro aro warm In their stalls in winter,
for fires are quite generally kept burning in
two stoves through tbe coldest of the season.
The calves do not need to be covered iu
the tummer, because nature has provided a
very thick coating of hair for them, aud in
winter tbey ure ehcarcd,
