reil clover, farms that produced scarce
ly a remunerative crop when tho vir
gin soil was first turned up, now yield
umiually heavy crops of choice wheat
or other grain. Tho distinguishing

Drying Apple..
Coleman's Jlural HoaV gives tho
following directions for drying nrplcs:
Dried apples are used as a necessity in
tho place of green apples. They nro
not to bo compared, of course, with tho
fresh Juicy fruit. Tills is in consequence
of an error on tho part of those who dry
them. Almost any apples nro taken to
dry. Would a man take such to eat-
to uso for cooking? Wo don't eat bad
apples only when wo get them in tho
dried state. Aot only that, wo get tnem
In a bad state, partially rotten, sticking
together, often fly-speckled. It is a
habit moro than anything clso that
gives us such apples ; wo nro also somo
what careless ; and considerably Ignor
ant. Wo aro not aware, for Instance, or
do not realize it, that on apple dried is
still much tho same that it was before
it was dried, excepting the juice. Thus
a sour applo will bo sour as in its green
state. If hard and immature, tboso
qualities will bo immeasurably retain
ed. If your applo Is sweet, you get it
sweet, dried. If it is n good flavor
when green, that flavor will bo retain
ed when dried. If tho fruit is mellow
when dried, it will retain its mellow
iiOiS. Tho best dried apples, perhaps,
that are used, aro the .."Ksopus Spltzen-
h:rgs not when made up ns soon ns
picked ; but when In a mellow stale,
ns they will bo In 1'ebruary or March,
or earlier If the season is warm. Made
then, when ally 1ms no access to them,
and properly dried, thcro is nothing
finer than tho perfection of the green
fruit Itself. Thus, winter drying of
fruit is better than when made earlier.
Tho dried fruit then Is clean, bright and
mellow, nml not harsh and sour not
tasting of rotten apples or mould, unless
carelessly managed, dried too slow, and
permitted to get damp during tho pro
cess (iw in the care somewhat at nights
in the absence of fire), or after: for
fruit when dry must bo kept dry
Treated thus, dried fruit Is but little
below fresh fruit. Try it. ,
Dried apples may bo madu of an e.v

After f tewing them, or cooking them
down to a poft mass, add (a few mlti
utes before taking them up) n lemon or
two, sliced thin, and stir well into the
ma isomo persons who were mine

a nice sauce for tho supper or breakfast
lime.

recipe for doing it is furnished by ono

clean barrel, sprinkle salt in tho bottom,
(cover tho bottom:) then lay down a
layer of okra evenly over tho burlaw of
tho salt i then, on this, another layer of
okra, as before, and so on till tho barrel
is full : or you liavo put us much as do
sired, covering tho whole, when done,
wltli a thick layer of salt.

him a nice pasty & bottle of wine to taku
with him, that ho might refresh himself
nt his work. As ho went Into tho wood,
n llttlo old man bid lilm good day, and
snld, "(live mo a little piece of meat
from your plate, and a little wine nut
ofyour bottle, for 1 njn hungry and
thirsty." Hut this clever young man
said, "(Jive you my meat and wlnoV
No, 1 thank you, I should not have
enough left for myself:" and away lie
went, lie soon began to cut down a
tree j but ho had not worked long before
he missed his stroke, and cut blnneir,
and was forced to go homo to have the
wound dressed. Now It was tho little
old man that sent him this mischief.
Next went out the second son to work
and his mother gave him too a pasty
andn bottle of wine. And the same lit
tie old man met him also, and asked
him for something to cat. Hut he
too thought himself very clever and
said, "Tho more you would eat the less
there would bo forme: so go your way 1"
The llttlo man took care that ho too
should have his reward, and the second
stroke that he olmed against a tree hit
him on the leg : so that ho too was
forced to go home.
Then Dummllng said, "Father,
should llko to go nnd cut wood too."
Hut bis father said, "Your brothers
have lamed themselves i you had bet
terstny at home, for you know nothln;
nbout tho business of wood-cutting.1
"lint Dummllng was very pressing; and
nt last his father said, "do your way!
you will bo wl-cr when you have
smarted for your folly." And his
mother gave him somo dry bread and n
hottlo of sour beer. Hut when ho went
into tho wood, ho met tho llttlo old
ni'iu, who, said, "(live mo somo meat
ind drink, fori am very hungry and
thirsty." Dummllng said, "I have only
dry bread and sour beer; if that will
suit you wo will sit down and eat it,
such as it is, together." So they sat
down ; and when the lad pulled out his
bread, behold It was turned Into rich
pasty : and his sour beer, when they
tasted It, was delightful wine. They
atoand drank heartily; and when they
had done, tho llttlo man said, "As you
have a kind heart, and have been will
ing to shnro everything with mo I will
send a blessing upon you. Therestands

find something at the root." Then lie
took his leave, nnd went his way.
Dummllng set to work, and cut down
the tree; and when it fell, he found, In
u hollow under tho roots, a gooso with
feathers of puro gold. He took It up,
nnd went on to a llttlo Inn by the road
side, where he thought to sleep for the
night on his way home. Now tho land
lord had three daughters; and when
they saw tho goose they were very eag
er to look what this wonderful bird
could be, and wished very much to
pluck ono of tho feathers out of lis tall.

Dummllng was gone to bed, and then
seized the goosoby tho wing; but to her

third, and she also wanted a feather;
but tho other two cried out, "Keep away!

ever, sho did not understand what they
mcnt. "If they aru there," thought
she, may as well be there too." So
she went up to them ; but tho moment
sho touched her sisters sho stuck fast,
and hung to the goose as they did. Ami

all night in the cold.
