the profits upon the outlay increase in move

the lowest and fifty the highest sum that can
be employed in the common culture of the
same acre of land, it is more than probable
thai if twenty-five dollars would return at the
rate of ten per cent., the fifty dollars would
yield twenty per cent., or an i:iternicdi::te
sum in the same ratio. Admitting this to be
true, and no experienced agriculturist will
doubt it, it follows that a capital of five- thou
sand dollars expended in the enhivatioa of
two hundred acres will only yield a profit nt
five hundred, while if it were applied to one
hundred acres it would produce on< thousand
dollars ; therefore it is evident that his profit
would be increased by diminishing the quan
tity of his land.
Many a man has been ruined by a large
farm who might have acquired a competency
oti one with half the ntrmber of acres. Most
farmers are anxious for large plantations,
and many are thus betrayed into the error of
attempting to worh a greater quantity of
ground than they have the means of mana
ging to advantage. Borne in the delusive
hope of aqtiiring these nieati: by future sa
vings, others from the vanity of holding more
land than their neighbors : hence arise a de
deficiency of stock, imperfect tillage, and
scanty crops, with all the train of rent in ar
rear, wages ill paid, and debts unsatisfied,
and final ruin.

It therefore behooves a man to weigh well
the charges with his means, and never allow
himself tc be seduced by any ideal "prospect

a larger farm than his property will enable*

If a farmer has one hundred acres it would
be much better for him to put the price ol
another hundred on it than to buy one hun

for double crops as is usually the case with

THE SWEETNESS OF FERMENTED
BREAD.
The little cavities in a loaf of Bread, which
gives it its spongy character, and makes it
light, are formed by the expansion of little
bubbles of carbonic acid gas ; there arc three
different methods by which these little mas
ses of carbonic acid are mingled with the
dougli.
In making what. is called amatcd bread, tho
carbonic acid is obtained by any economical
process, and is thr-n mechanically mixed with
the dough by agitating the two together in an
air-tight vessel. On being placed in a hoi
oven the hubbies of gas expand, and puff
the dough into a spongy muss.
Soda biscuit are raised by setting free car
bonic ncid from bicarbonate of soda. This
salt is composed of soda, carbonic acid, and
water, and if it be brought in contact with
tartaric acid, tbe soda leaves the carbonic
acid to combine with the tartaiic. and tho
carbonic acid is set free in the form of gas.
Advantage is taken of these ufliriiiies to dis
tribute carbonic acid gas in minute masses
through the dough. Tartaric acid is first
thoroughly incorporated with the dough, and
then bicarbonate of soda is added and also
thoroughly mixed with the mass. The tar
trate of soda, formed by the combination of
tartaric acid aud soda, of course remains in
the dough, and is token into the stomach
with the bread.
In fermented bread the carbonic acid is ob
tained from the Hour. All grain contains
starch, and by proper treatment starch may
be converted into grape sugar, which in its
turu may be changed iulo carbonic acid and
alchohol. Both of these changes arc effect
ed by fermentatiou. Panic fermentation is
simply the growth of yeast. Teast is a mi
criscopic plant, and when emerced in a prop
er liquid and subjected to the proper temper
ature, it propagates aud grows with great
rapidity. When it grows in contact with
moistened starch it converts the starch first
into sugar, and then the sugar into carbonic
acid and alcohoi. The sweetness of fer
mented bread is doubtless due to the circum
stance thai a portion of the sugar formed
from the starch remains in the bread without
being changed into carbonic acid and alcohol.
