Isicitual Department. WEDNESDAY MORNING Aug. 4, '69, Bottling Fruit. The question is often asked, "What kind of bottles do you use ?"—I reply, any and all kinds, from a common long-necked bottle for green currants, gooseberries, and rhubarb, to pickle jars for strawberries and raspberries, up to the glass, wide-mouthed, self sealing, patented fruit jars, which I reserve for plums, pears, and peaches, or any kind of fruit which is desirable to preserve in an unbroken state• These narrow mouthed bottles may be seal ed very nicely and effectively in the following way : Procure some pieces of new cotton cloth large enough for the purpose; then melt together an ounce of mutton tallow and a pound of rosin ; a little beeswax would be an improvement. Have it melted and mixed, and standing on the back of the stove, ready when you wish to use it. After the boiling fruit has been successfully introduced into the bottle, and while in this heated state, put in the cork, if you have one, or if not, a wooden plug will answer. Take one of the pieces of cloth and tie it with a stout string over the bottle ; then cov er entirely,rim and all, with the warm rosin. It would be as well to put another cloth over this, and, perhaps, more rosin ;it must be airtight. If I were to get a fresh supply of bottles, I would choose a kind of which would move or slip up if subjected to pres sure from within, as would be the ease if fermentation of the contents occurred. I never have had such an accident happen me but I have been assured that where lids are made to screw tightly on the bottle and the fruit fermented,the bottle would burst before the lid would yield. Learners in the art would do well to confine their first efforts to bottles with corke, using wax to wake the air tight.— American Agriculturist. the Influence of Sun-Heat on Fruits. Never was there a greater mistake made than that of supposing that fruit, produced in the shade, has the best flavor : it is a false notion, the mere chimera of half a century ago. The Black Hamburg Grape is,to some extent, an exception ; for its berries will not color if the branches are de prived of too many of their leaves, so as to let the sun in amongst the bunches too freely. Whereas the Muscat of Alexandria will not attain its rich amber color if so much over crowded with leaves as to keep the rays of the sun from penetrating free ly amongst the branches. A pine-ap ple produced in the winter has not the flavor of one ripened in the summer months of the year, when the sun is powerful. Again,under the old meth od of planting strawberries in beds 4 feet wide, the fruit is not to be com pared, either in size or flavor, with that of those planted out in single rows. Now, what is the reason of this? I contend that it is in conse quence of the action of the sun upon the fruit. The fruit shaded by leaves will always be more or less insipid and worthless, as compared with that 13 n which the sun has full play. It is the sun that puts flavor into our fruits. LIME AS A PRESERVER.—Air slack ed lime has been frequently recom mended as a preserver for vegetables when stored in cellars or pits. Re cently we heard a gentleman state that he was in the habit of spinkling it among his apples in barrels and bins, and he thought delicate fall varieties could thus be kept much beyond their season. The lime dust could be easily removed from the apples by using a cloth or brush, and it imparted no flavor to the fruit. The use of lime in the cellar, as a preservative agent is a good idea. It acts by absorbing moisture, and if one individual in the mass decays, the lime arrests the spread of the disease to others. It is well to hint to our readers that cellars should be overhauled at this season, and all decaying matter removed ; the "sweating" stage with stored vegeta bles is over,and specimens most prone to rot have developed disease. Sort these out, sprinkle some lime on the remainder,and purify your cellar from dangerous auxiliaries of disease. PAINT FARM . IMPLEMENTS.—Noth ing improves the looks of farm imple ments that have been weather-beaten or partially worn, more than a coat of paint. It gives them an appearance of newness not obtained by any other process : it also adds to the durabilty of woodwork, such as horse-rakes plow-handles, Sze. Blue paint is the favorite color ; it is more durable than either brown or red, looks better, and is nearly as cheap. All iron should be painted black, thus contrasting the two materials at the first glance. Knees and runners of sleds should be painted every spring, previous to stop, ing away, the crust of snow will quick ly wear off paint from parts above mentioned. This subject could be enlarged up , on, but it is unnecessary as all un derstand the benefit derived from keeping tools, etc., well painted. WEAK EYES IN HORSES.—Make up 4 wash of alum and water which re duce to blood heat, and with a, quill blow the liquid into the eye. After trying the above preparation three times, take a peice of alum as large as the end of one's finger, and, burning it in the fire, reduce it to a powder, and blow it stoutly by the same pro cess into the eye. We have tried burnt alum on a number of horses that have had sore eyes, and always found it a ,valuable remedy. It will remove all [II a . nd restore clearness to the eyes.
