Each -parish in Switzerland hires a man, generally from the district of Gruyere, in the canton of Frey- burgh, to take care of the herd and make the cheese ; one cheeseman, one pressman _or assistant, and one cowherd, are consid- ered necessary for every forty cows. The owners of the cows get credit in a book for the quantity of milk given by each cow daily. The cheeseman and his assistants milk the cows, put the milk all together and make cheese of it; and at the end of the season each owner receives the weight of cheese proportionable to the quantity of milk his cows have delivered. By this co-operative plan, instead of small sized, unmarkatable cheeses, which each owner could produce out of his three or four cows’ milk, he has the same weight in large marketable cheeses, superior in quality because made by people who attend to no other business. The cheeseman and his assistants are paid so much per nead of the cows in money or cheese, or sometimes they hire the cows and pay the owners in money or chaese. A similar syntem exists in the French Jura.— Notes of a Traveller. —— ese OB rer. TrAINING STEERS, —The Southern Home- stead has the following sensible remarks upon training steers. We commend them to all who have the care and training of such apimals : It is a well known fact that kindness will subdue the most ferocious of animals ; but by a little kindness they will get overfa feel- ing of fear, and become perfectly gentle and obedient. In order to meet with success in training steers, they should be treated kindly, and lct them know they are not to be hurt, and one half the work of breaking them is done. Give them occasionally a few ears of corn, or some oats, &c; then bring the yoke into the yard and let them see 1t and smell of it before it is placed upen their necks, as this will teach them that there is nothing to fear from it. After placing the yoke upon their necks, be very gentle with them ; take hold of the bow and turn them about the yard. This plan should be pursued for a short time, when they can be taken out and hitched to a small log, and after leaving them to haul a log, they can be put before a sled, and very soon they will be put under good discipline. GrixpiNg Feep.—Some English writers have claimed, and we think justly, that if a proper machine were invented to grind hay the approximate in value to unground oats, in producing fat and mucle. This opinion has been founded on the fact, that nineteen pounds of hay cut one inch long, would, for flesn-making, equal in value twenty-five pounds in the uncut state. This truth has given rise to machines for chaffing hay in England, which af fast finding favor with cattle raisers. Their costis too great for the American market, and manufacturers of cutting machines have recently succeeded in producing those capable of cutting one- fourth to three. cights of an inch in length, and at a cost of about $70. for a machine capable of cutting one ton per hour. Such a machine may be seen at our office at this time. A chafing mackine for bruising oats is now called for and all who have observed the inability of the horse to digest whole oats, must admit the fact that some means of dividing them before being fed should be adopted: — Working Farmer. Crerries DESTROYED.—A correspondent of the Rural New Yorker, writing from Penn Yann, N. Y., to that paper, says tho blossom buds of nearly all the finer varieties of cher- ries were destroyed by the intense cold of February last. The mercury, at the period named, decended to 18 deg. below zero.— As this was two degrees higher than the temperature mn February, 6, 1855, when the cherries were not injured, he argues that this destructfon was the result of the excess of warm wet weather last fall, causing an abundant flow of sap into the trees, thereby rendering the flower-buds unfit to endure the severity of the winter. He mentions also, that all the Isabella grape vines, not protected, have been frozen almost to the ground, while the Catawba, Clinton and Oporto, are but slightly injured. ——g - EOD A Secret 10 FARMERS. —It is worth know- ing that every keeper of cows may cause them to calve during the day-time, instead of night or day, asit may happen, causing much watching and want of sleep. The simple method of which is this: When the cow is in calf and the milk beginning to fail, till she is about “ yelled,” let no milk be taken from her during the day or at night bat milk her any time in the morning, and let none be taken but in the morinng; and when ber time to calve has come, she will drop her young in the day-time.
