THE DAILY EVENING TELEGRAPH PHIL ABELPHI A, FRIDAY, DECEMBER 13, 186T. 6 ) Chocolate. Tbis nutritions article) U prepared from cocoa, the fruit of the Throbrama Cwar, and was first introduced into Europe from M-xioo la tiiu J ear 1.0. The amnt Aztecs pre pared it with great skill, and it U Baid that the n anner in which they inauufaottireU it gave it such Bolidity that it was really more an urticltf of food than of drink. After the FpaninrJu couqrtertd Mexico they did not fail to record their relibh of ita excellent llavoraud their appreciation of it nutritious qualities, and m their estimation a single cup of it was enough to Bustaiu a man on a day's march. Chow late is prepared by grinding cocoa nibs to a paste, and niixine witli this various arti- L rles to ilavor and perfume the preparation. The Aztecs used vanilla and other the Fiench afterwards introduced musk and various other perfumes. Sugar ia also added to it, professedly to reuder the fatty portions more mixable in hot fluids, as well as to give a sweetness to a drink that dos not really A. 1 -v, n till V M 1J Hi' 11 kUU EUt'dhlvUllUU V, cheaper article was the principal reason. Wheat and rice Hour, sago meal, the various starches, Maraata arrow-root, honey, and vn-lflttl-O-l flm ftlun rta..jl VslnrrL ttnil farina j ni'laHMtd are a undoubtedly ls 1 cocca, lut it is - i ?e a real core seen the quantity of oil in the more irom the fact that there cocoa used than that these in?re- dinls act chemically upon the genuine article, and because, being attached in part to the paste or Jelly formed of these foreign bodies in hot water, the oil is prevented from coming to the surface. The addition to these euhstaiices involves that of coloring matter, that the original color may be re tained; and for this purpose Venetian red, umber, auottft, and in a few instances tnetallio salts, Hindi as cinnabar and red lead, are known to have been used; and the genuine oil Wing thus fo entirely disguised, it has been found exiedlent to add some animal fat, such as tallow or hog's lard. The mixtures, what ever they may be, are introduced into the cocoa peste, and thoroughly incorporated with it by rolling while it is kept at a suitable tem perature. Before cooling the chocolate is turned in its thin state into moulds, in which, it receives the form of the cakes in which itia sold. Thus prepared, the chocolate in common use is an article of very uncertain composition, and it is not strange that it fails to become the favorite beverage which it is in the countries where it is produced. Chocolate is used in the manufacture of a variety of sweetmeats, and has often been precrihed in medical practice as a mild nutri tive drink in some acute diseases, and as a rood article of diet for convalescents. If it does not always agree with delicate stomachs, the fact may be attributed as well to the un known substance mixed with it as to its oily nature. The manufacture of chocolate has of late years reached to a perfection that may be termed truly artistic. There are no shapes of figures that are not made with it, and, like india rubber, it is almost indis pensable. The " Black Cat" Not that Cat, but Another Cat.
