A HORSE r ' In Paris, where, according to Tom Hood, "They call their mothers mares. And all their daughters filleys," torse-flesh has grown into so much favor as an article of food, that thero are no less than fif teen butcher-shops for its exclusivo sale. Four restaurants also oiler the new "viande" as the distinguishing feature of their carte. This is a now and exalted position for the torse to occupy. It opens to his view a future glorious in the prospective 1 The horso will no longer he placed before the cart, but both carte and horse will be placed before the guests of mine host. This maybe justly termed an Inn ovation in French hostelry. The French are the authors of the proverb, "It is nobody's tusiness what another body eats." They have less compunction of stomach than the ostrich, and more ways of squelching it by gravies and condiments. Everything is meat that comes to their larder. No doubt horse-flesh will soon become a stable article of diet, and be Sold at a galloping rate. It is meet that it should. At such a time we shall expect to observe a radical change in hotel nomen clature. The great . dining-hall will then be known as the Salle A Manger. Guests with choice bits in their mouths will go over the various courses in a style which thj coursers themselves scarcely rivalled in their palmiest days, before they were converted into ragout3 and mince-meat. Racij viands will beBerved up as the souvenirs of anti quated racers; tho distilled spirit of the draught-horse will go round in a de-canter, and many a stirrup-cup will win praise from con noisseurs. Some iiuch bill of fare as the fol lowing will then be found upon first-class tables: soups. Horse-tail. Smiille, utter mile heats. ROAST, FBIKD, ETC. Roast Saddle. Mustang, curried. Fried Withers, uastrunu. Sliced Thorough-bred, 1'ony Siuea. ENTREES. Colt's Head, on a Charger. - bullion Hash. Fiilet-au-Filley, garnished with Fetlocks. PASTRY. Blood-Puddine, from best blood-horses. (Sliced He-buiits. Whip fcyllubub. DESSERT. Arabian. But we need not anticipate the future by any further speculations. It is sufficient to say that the new system of diet has now been fully m-stall-ed in France under the most favorable horse-pices. Hereafter the cooks will be the most favored chevaliers among that gallant people. Doubtless the innovation will extend to this country, and be adopted by those whose habit it is to mimic foreign fashions. If so, we shall not be surprised to see them next make of asses themselves, aud turn cannibals. OUR JAPANESE VJS1T011S. On the arrival of the Japanese Embassy in I New York, on their way to visit the (treat American Tycoon at Washington, they stopped at the Metropolitan, where tho No-Kamis and Tommy, under the superintendence of Alder man Boole, stopped on a former occasion, some years ago. This time, by the request of the Messrs. Leland, we were asked to come on and accompany the illustrious visitors around that uty, to act as their confidential friend and guide, to (? all their bills (except their hotel imiB), and, to keep them from the professional 'Confident! After waiting on Bixth avenue some time for a car to come along with the sign on it, "Coloued PEKB0N8 ABE ALLOWED TO KIDB IN TU1B CAR," I and my burnt-umber friends got in, and, most unexpectedly, the Conductor went to some trnnble to Rite my oppeiueau melius ueais. The reason I learned afterwards the Con- factor himself was both a foreigner aud a rimrrhead. 0a MriviPg fcttlie Twk, UDg-Onionset walked towards the policeman to pay an en trance fee. I immediately stopped him, tell ing him I would settle that, and they could with me. I made similar" arrangements in reference to crossing all of the bridges in the Park. Going through the walks, Rootah Ha Oah would insist on taking all the direction boards for praying machines, and I had the greatest difficulty in preventing the whole Embassy from falling down before a little rustic seat In the Ilamblo, on which was sitting a young mnn with nn opera-glass eyeing some ladies in the distance. They mistook it for a sacred shrine with its idol, w A 9 . -NTS;- A the rr.ESiPiNO deity of the place. 1 assured them it was an idle image, but that New York abounded with them, and that nobody worshipped them but silly girls. After viewing other interesting objects in the Park, wo returned to our hotel. When wo arrived there we found that some of the Embassy had been to the Auction stores down r.roadway, and had purchased some half-a-dozen watches apiece, and Sum-Punk-Kin, the Treasurer, had bought a bottle of Spalding's Liquid Glue, which he supposed was to dress his hair, and with that belief he saturated his pig-tail to its utmost capacity, when, on retiring to rest for the night, it was found that the supposed hair oil, being glue, had "set," as the cabinet-makers say; aud he not being a hen, could neither set nor lay in any comfortable posture, and going to sleep with this arrangement was TIIE BEST THAT HE COCLD DO; for the glue was good, and, like the American Tycoon, would stick to its point, and refuse to bend even to the heads of Japan. Next day they bid mm FAREWELL to their host, and left for Washington. On the ferryboat a little boy tried to sell the cele brated Japanese puzzle, which consisted of two pieces of wire linked together, and which was a greater curiosity to the Japs than to anybody else. 'When the boat reachod the slip at Jersey City, most of the passengers of course ran and jumped over the chains before it landed. My friends, who were all practi cal gymnasts in their own country, seeing the natives thus act, began to leave the boat IN TUIS STYLE, as showing greater proficiency in acrobatio attainments than that possessed by a majority of the passengers. I explained to Pat-Tom- Mato afterwards that the hurry In getting off the boat was not to show their gymnastic abili ties, but it was merely a custom, originating in the fact that most of those who practised this speedy way of doing were hungry shop- keepers, anxious to get home to their supper Now and then one. ot them was drowned or had his head mashed, but as a general thing the feat was performed with safety. Ung Onionsett thought a spring-board on tho end of the boat would be an Improvement, as the experienced traveller could then leave the boat with a double somersault After getting seated in the cars, the various small peddlers began coming througn. ine "Maple Candv Man" brought Ins box arouna, I .r. .. , ., TV. -v.,- lnlr a 7iiu.H of I W lieil eHCIl OI lllH JiUlUUSSY j candy and put it in his mouth; but when , the candy man nignilled to Ilootau-Da-uan that he wanted mouey, it was with tue greatest effort I prevented the wholo Royal .TanancFe Commission from nor for mine the ari-kari on the spot, and ripping up them selves in a first-class manner iu a first-class railroad car, so mortified were they at eating up by mistake the man's samples. Of tho mm 1 1 sf specimens of American pictorial literature, Ung-Onionsett bought a copy of everything that had a portrait in it of the American Ty coon in any shape. It was not long before tho whole company got asleep, with the exception of Sum-Punk-Kin, who could not sleep on account of his glued pig-tail. I left them at Philadelphia to pursue their own way to the Tycoon of the White House, and to Mr. Seward, that other "coon," whom to see at an advantage one must be wide awake. Sum-Punk-Kin bade me good-bye, but neither his queue nor his wrath at Mr. Spalding, tho inventor of the glue, had yet softened, but it is hoped that time will mellow both. AMUSEMENTS.
