Make Valentine’s Day special by serving chocolate-covered cherries.
Almost everyone loves chocolate and strawberries. Combine the two, and you’re sure to find a
spot in your sweetheart’s thoughts.
This recipe is a tried and true winner from cooking expert Shirley Orfanella, Quarryville.

CHOCOLATE-COVERED CHERRIES
4 jars (16-ounces each) maraschino cherries with stems
l A cup dark nun or cherry juice
Fondant:
1 can sweetened condensed milk
2 tablespoons plus 2 teaspoons light com syrup
Vi teaspoon almond extract
8 cups confectioners’ sugar
VA pounds coating chocolate wafers
Remove 1 tablespoon cherry juice from each jar and add 1 tablespoon rum. Cover and let
stand four hours or more to flavor.
Drain cherries in colander, place on paper towels until dry. It is very important to make sure
the cherries are dry. Mix milk, extract, and com syrup. Gradually stir in confectioners’ sugar.
Work mixture with your hands to get a smooth fondant. Line a cookie sheet with waxed paper.
Place a rounded teaspoon of fondant in your hand. Press into two 2-inch circle (in your hand).
Place a dried cherry in the center and wrap around cherry leaving stem exposed. Place on
cookie sheet. Refrigerate two or more hours until fondant is firm. Melt chocolate. Carefully dip
each cherry and set on waxed paper until set. Do not refrigerate after dipping as cherries will
weep.
Allow a week for fondant to liquefy or use as is (I do). Makes approximately 96.
