The Checker Cab Manufacturing Company, based in
Kalamazoo, Michigan, was founded in 1922 by
Moins Markin The company found its biggest success
in New York City, wheie the last ot the fleet was fi
nally put to rest in July 1999 Besides their easy-to-hail
bright yellow-and-black-checkeied design, the cabs
more than a tew con
tinue to be lovingly maintained by cai aficionados
and collectois alike
Too had the only people who know how to
run the country are husy driving cahs and
culling hair.

Anchovy Chicken Salad
2 pounds cooked chicken
(no skin)
1 cup chopped celery
1 cup mayonnaise
2 ounces canned anchovies
1 tablespoon capers
grated zest ot one lemon
freshly ground pepper, to taste
Chop chicken and mix
with celery, set aside
Blend mayonnaise with
anchovies, capeis, lemon
