In Praise of Folly
October 28 is the probable birthday of Desidenus (for
“beloved”) Erasmus, the Dutch author and scholar
bom in Rotterdam in 1465. Some sources say it was
1466, but either way, he was considered one of the
greatest of the Renaissance thinkers. Erasmas left many
great writings, including his “Encomium
Moriae” (In Praise of Folly). His work, Bl
nounced Martin Luther’s the-
Erasmus worked from within
the Roman Catholic Church for internal reforms, advis
ing greater moderation and tolerance, and espousing
humanism and its characteristic social reforms.

Chicken Fricassee
2 tablespoons butter
2 tablespoons oil
4 pounds chicken pieces
1 onion, chopped
2 cups chicken stock
1/2 pound mushrooms, sliced
3 carrots, sliced
1 cup cream
2 egg yolks
Heat butter and oil in
Dutch oven and brown
chicken over low heat.
Add onion and stock,
cover, and simmer for 15
minutes. Add mushrooms
