Majority prices were unchanged on
whole and sugar yolks, unchanged to
lower on salt yolks, and balance of other
items were irregular when compared to
last week’s values. Offerings were usu
ally reported as adequate to available.
Buying interest improved but sellers
were somewhat cautious at the lower
trending price levels. The undertone was
mixed. Liquid and frozen eggs (ingred
ients included) processed under federal
inspection in the Eastern region for the
week ending May 20, 2000 were 4 %
more last week, and 4 % more than a
year ago. Shell egg suppliers were usu
ally sufficient for current needs.
