stressed the importance of base
line information gathering for
benchmarking purposes. The

Slayton stressed the issues of
quality assurance. “We’re look
ing through the eyes of the con
sumer,” he said. “We’re aiming
for a beef product that essen
tially exceeds what consumers
expect in taste, price, color,
safety, leanness, ease of prepara
tion, and anything else import
ant to them.”
Slayton predicts that the re
sults of the third beef quality
audit being conducted by Na
tional Cattlemen’s Beef Associa
tion (NCBA) this year will show
continued movement of the in-
