84-Lancast«r Fanning, Saturday, May 15, 1999 Onion Possibilities (Contlniwd from Pago B 2) ONION SOUP 5 tablespoons butter, divided I'A cups whole tiny onions, peeled* 1 teaspoon sugar 'A teaspoon ground thyme 4 cups beef stock or consomme Salt and pepper 4 '/« ded slices crustless bread, cubed cup chopped parsley cup provolone cheese, shred (optional) Melt 3 tablespoons butter in large saucepan. Add onions and stir to coat in the butter. Sprinkle onions with sugar, stirring con stantly over medium heat, cook until light and brown. Add thyme, beef stock, and salt and pepper to taste; cover and bring to a boil, reduce heat and simmer for 20 minutes. Melt remaining 2 tablespoons butter in large flying pan. Stir in bread cubes and fry until cubes are light brown. To serve, divide bread cubes and parsley into four bowls. Divide soup into bowls. Top with provolone cheese if desired. Masked Bandits Capture First Place The St. Joseph School, “Masked Bandits” won the eighth annual York County fifth grade Envirothon May 5 with a total of 353.5 points at the Izaak Walton League grounds near Dallastown. The team coached by Marie Bair and Diane Bowen consisted of Amanda Holdorf, Andrew Bair, Matt Bowen, John Geiger, Adam Swomley and Bryon Long. The North Salem “Wild Weasels” took second with 346 points and the Fawn Area “Wild Things” placed third with 335.5.
