You’ll Never Rue the Rhubarb
Rhubarb (also called the pie plant) is best planted in
the early spring before its growing season, either by
purchasing new plants or roots or by separating old
clumps into smaller divisions. Separate each by at least
three feet and plant it a good two inches under the soil,
then fertilize generously with farm manure,
jyfeflL repeating the feeding each fall. A small crop
may be taken the next year, but it’s best to
wait until the following year so that the
plants have a chance to establish them
selves. Pick by twisting the stalks;
icutting the stalks can lead to rot that
affects the roots. Always leave a few
stalks growing to feed the roots.

Rhubarb Grilled Chicken
2 cups diced rhubarb
1 cup red wine or orange
juice
2 cups sugar
1/2 cup Dijon-style mustard
4 pounds boneless chicken
breasts
1 tablespoon olive oil
Combine first 4 ingredi
ents in a saucepan and
simmer until rhubarb is
soft. Puree in a blender
and set aside Skin and
lightly pound the chicken
breasts. Oil the grill and
