All Hallow’s Eve
In ancient times, it was believed that on All Hallow’s
Eve (known as Samham to the Celts), the spirits of the
dead could visit the living before the long, cold winter
to come People lit bonfires and made lanterns by hol
lowing out potatoes or turnips to carry coals from the
fire, similar to our modern-day jack-o’-lantems These
beacons lit the way for the wandering
spirits who visited on Samham. In
the Celtic calendar, Samham meant
“summer’s end,” and the spirit of i
Samham was celebrated by making
offerings to the dead and thanking
the summer god for the fine weather
and continued light that was just drawing
to a close

Creamy Pumpkin Soup
2 cups chopped onions
3 tablespoons butter
2 cups cooked pumpkin
(fresh or canned)
1 carrot, diced
1 potato, diced
2 apples, peeled, cored,
and diced
4 cups water
1-1/2 cups milk or apple
juice
1/4 teaspoon cinnamon
salt and pepper,
to taste
