822-Lancaster Farming, Saturday, Junt 27, 1993 Recipes (Continued from P*g« B 21) BLUEBERRY CHEESE PIE 1 unbaked pie shell 2 cups blueberry pie filling Cream cheese layer: 8-ounces cream cheese, sof tened to room temperature 'A cup sugar 'A teaspoon salt 2 eggs '/> cup milk '/a teaspoon vanilla Blend cream cheese, sugar, and salt in bowl. Add 2 eggs, beat again. Blend in milk and vanilla. If mixture slightly curdles, don’t worry—it bakes out. Spread blueberry pie filling over bottom of pie shell. Pour cream cheese mixture over pie filling. Bake at 350 degrees for approxi mately 45 minutes or until lightly browned. We are a family of 9 and live on a dairy farm. We eat lots of dairy products like cheese and ice cream. We grow our own veget ables. Right now our children art enjoying dog Sheba's 5-week-old puppies until someone buys them. Mary Ellen Zimmerman Millmont CREAM PUFF CAKE 1 cup water 1 cup flour 'A cup butter 4 eggs Bring water and butter to boil. Add flour. Stir until form a ball. Remove from heat, cool 5-10 minutes. Add eggs one at a time, beating well, after each addition. Butter will be thick. Spread into 9x13-inch greased pan. Bake at 400 degrees for 30 minutes. Cool. Batter will form up the sides. Topping: 8-ounces cream cheese 2/4 cups milk 2 small packages instant vanilla pudding Mix ingredients until thick. Spread on top of puff. Top with whipped cream and drizzle choco late syrup on top. Ada Newswanger Parkesburg RASPBERRY PUNGE 4 tablespoons sugar 3 tablespoons shortening A cup milk VA teaspoon baking powder % teaspoon salt VA cups sifted flour Cream sugar and shortening. Add milk and blend well. Combine flour, baking powder, and salt Add to other ingredients and mix well. Set aside. In a pan, combine the following: 1 cup sugar 1 tablespoon shortening 'A teaspoon cinnamon 1 cup boiling water 1 tablespoon com starch Mix together all ingredients, stir constantly. When thickened, add 3 cups raspberries. While mixture is bubbling, drop batter by spoonfuls over berries. Cover and cook for 10 minutes. Serve hot with milk. Also delicious with blueberries.
