CARROT CASSEROLE
8 carrots cut into 1-inch pieces
20-ounce can apple pie filling,
drained
'A cup sugar
2 tablespoons lemon juice
Paprika
Butter
Cook carrots in lightly salted
boiling water 12-15 minutes.
Drain and add to apple pie filling
with lemon juice. Pour half of mix
ture into a greased square baking
dish. Sprinkle with % cup sugar.
Add remaining mixture and
sprinkle with balance of sugar Dot
generously with butter and coat
heavily with paprika. Bake at 375
degrees for one hour. May be pre
pared a day in advance. Serves
10-12.

4 cups brown sugar
'A pound margarine
1 gallon milk
12 eggs, beaten
8 tablespoons flour
8 tablespoons cornstarch
'A teaspoon salt
1 teaspoon vanilla
Brown the sugar and butter. Set
aside. Heat milk. Add eggs, flour,
cornstarch, and salt to the milk.
Boil slowly until thick. Take off
stove. Add sugar mixture and van
illa. Then beat with a mixer. Cool.
Note: Half the recipe makes two
huge dishes.
Mom often makes caramel pud
ding when she wants to make a
pudding. This pudding is many
times a dessert when we have Sun
day dinner guests.
Mom teaches me how to do
housework. / like to help cook. I
also am learning to sew from her
skills.

24 tomatoes
6 green peppers
4 onions
2 cups cider vinegar
6 tablespoons sugar
2 tablespoons salt
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon ground allspice
Peel tomatoes. Chop tomatoes,
peppers, and onions. In a large pot,
add the vegetables and the remain
ing ingredients. Simmer for 3-4
hours. Pack in pint sterilized jars.
Makes 5 or 6 pints.
