ANSWER Mary Louise Starr, Mercersburg, wanted a
recipe for green tomato relish. Thanks to Rosene Leinbach,
East Earl, for sending a recipe.
10 green tomatoes
6 red peppers
12 green peppers
4 cups cabbage, finely shredded
4 cups onions
A cup salt
4 cups vinegar
6 cups sugar
2 cups water
2 tablespoons mustard seed
1 tablespoon celery seed
1 % teaspoon turmeric
Grind or finely chop tomatoes and peppers. Mix with cab
bage and onions. Sprinkle with salt and let stand 8-10 hours.
Drain and rinse. Add the six remaining ingredients. Mix well
and bring to boiling point. Simmer 5 minutes. Pour into jars
and seal. Opened jars keep for many weeks in refrigerator.
Good on hot dogs and hamburgers. Also good mixed with
equal parts of mayonnaise and used as tartar sauce for fish.
ANSWER Here is a recipe for tomato butter from Lee
Laverty, Dover, N.J.
3 cups tomato pulp
1 cup apple juice
2 cups sugar
Scald and skin tomatoes, cook until soft with small amount
of liquid as possible. Put through very fine sieve. Add apple
juice and sugar. Cut thin strips of rind off on lemon and add to
tomato mixture. Cook until consistency wanted.
