Chocolate Angel Food Cake '/« cup cocoa 1 cup cake flour IV4 cups granulated fructose I'A cups egg whites 3 /« teaspoon salt 1 'A teaspoon cream of tartar 1 teaspoon vanilla extract 'A teaspoon almond extract Preheat oven to 325 degrees. Grease 10-inch tube pan. Sift cocoa, cake flour and % cup frutose together four times; set aside. Beat egg whites with salt until foamy. Sprinkle cream of tar tar over egg whites, beat until stiff but not dry. Fold in remaining fructose, 1 tablespoon at a time. Fold in vanilla and almond extracts. Fold in dry ingredients a little at a time. Pour into a greased 10-inch tube pan. Bake for 60 to 70 minutes. Variation: For regular angel food cake, eliminate the cocoa. Add the following and mix well: 4 cups apples, peeled, shredded 1 cup carrot, shredded 1 cup coconut 1 cup raisins 1 cup chopped nuts Add the following and stir until moistened 1 'A cups oil 'A cup milk 4 teaspoons vanilla 3 eggs, beaten Line 36 muffin cups with paper liners.
