For Laura Huber, the new Man
heim Farm Show queen, Monday
night was one to remember. Not
only did she receive the crown in
competition with nine other con
testants, Laura got to meet Samuel
Hayes Jr., Pennsylvania’s secret
ary of agriculture.
Hayes has been visiting many of
the community fairs across the
state and came to Manheim
through the invitation of Earl Geib,
president of the farm show.
Hayes toured the fair and spoke
briefly at the hog show before visit
ing the queen contest
Hayes complimented the com
munity spirit at Manheim and said
the fair was a strong showcase of
agriculture and Lancaster County.
Laura Huber is the daughter of
Carol and Larry Huber, Manheim.
The first runner-up in the fair
queen contest was Emily Heistand,
daughter of David and Claudia
Heistand. Second runner-up was
Amie Shelley, daughter of Dave
and Freda Shelley.
After only one entry in the con
test last year, officials said that in
their memory, the 10 applicants
this year made it the largest class
ever to compete at the Manheim
Fair queen contest.

PORK PIE
1 recipe plain pastry
2 pounds lean pork, cubed
214 cups pork stock or water
54 teaspoon salt, to taste
1 bay leaf
1 cup diced carrots
2 cups diced potatoes
14 cup diced onions
Brown cubes of pork in fat Add
stock or water, salt, and bay leaf.
Cover and cook slowly for 40
minutes. Remove bay leaf and add
carrots, potatoes, and onions.
Cook for 20 minutes or until veget
ables are tender. Transfer mixture
to casserole dish. Cover dish with
pastry. Bake in hot oven at 450
degrees for 20 minutes or until
browned. Serves 6 to 8.
MAPLE-MUSTARD-GLAZED
PORK ROAST
2 pound boneless pork loin roast
’/< cup maple syrup
3 tablespoons Dijon-style
mustard
2 tablespoons cider vinegar
2 tablespoons soy sauce
Salt and pepper; to taste
Stir together maple syrup, mus
tard, vinegar, soy sauce, salt and
pepper. Spread evenly over pork
roast and place in shallow pan.
Roast pork in a 350 degree oven
for about 45 minutes to 114 hours
until internal temperature, mea
sured with a meat thermometer,
reaches 160 degrees. Remove
roast from oven and let rest 10
minutes before slicing to serve.

ries; 25 gm protein; 7 gm fat; 393
mg sodium, 66 mg cholesterol: 66
mg. Serves 6.
