Following the pageant, an ice
cream social was held.
Cook’s Question
ANSWER Here are several recipes sent in by readers.
I’m uncertain what they are in response to sincethey were not
marked. But I'm sure you'll enjoy these from Elmer Beiler of
Gap and from Salome Fisher.
Bring to a boil:
2 sticks butter
1 cup water
4 tablespoon cocoa
Sift together:
2 cups flour
1 teaspoon salt
2 cups sugar
Beat well and add:
2 eggs
1 teaspoon baking soda
Vi cup buttermilk or sour cream
Beat and pour into large cookie sheet. Bake 20 minutes.
Frosting:
1 stick butter
4 tablespoons cocoa
6 tablespoons milk
4 cups confectioners' sugar
1 teaspoon vanilla
Melt butter. Add cocoa and milk, bring to boiling. Remove
from heat and add remaining ingredients. Beat well. Spread
on while cake is warm.
Bottom:
2 cups graham crackers, crushed
% cup butter, melted
1 tablespoon sugar
Filling:
1 package lemon Jell-0
1 cup hot milk
8-ounces cream cheese
1 cup sugar
1 large can evaporated milk
Whipped cream topping, if desired
Dissolve Jell-0 in hot water, add cream cheese and sugar,
whipped cream topping and milk until thick. Combine all ingre
dients. Pour into crust. Chill until firm.
Indian Pudding
% cup cornmeal, preferably stone ground
'A cup dry milk
2 tablespoons dry egg
'/• teaspoon salt
'/« teaspoon cinnamon
'/»cup molasses
Mix and pack into a small bag: cornmeal, dry milk, dry egg,
salt, and cinnamon. Carry the molasses separately in a leak
proof container inside a self-sealing plastic bag.
On the trail: Add 1 'A cups water to the dry ingredients in a
pot. Add molasses. Bring to a boil, then cover and simmer 20
minutes, stirring occasionally.
Let the pudding sit off the heat to cool for at least 10 minutes
before eating it. Serve plain or with yogurt, milk, or cream.
Serves 6-8.
